EXCELLENT recipe. I have used it many times. I like to make a few minor alterations.
    1) I like to add extra banana. It makes the bread denser and more flavourful. I reduce the sugar by a couple of tablespoons since the extra banana adds extra sweetness.
    2) In addition to the nuts that are already in the batter, I add more on top of the loaf. Makes it look pretty and I love the extra crunch.
    3) I double the cinnamon that the recipe calls for. It doesn't overpower it, it just makes it more delicious!
    4) I butter the pan generously, but don't flour it. It still pops out easily, and without the messiness of flour.

    Hi Stephanie,
Thank you for all your wonderful recipes. Seeking to reproduce the banana blackberry muffins from a favorite, local French bakery, I modified your recipe for banana bread. I removed the spices and nuts, doubled the vanilla, and added a pint of fresh blackberries. I followed the rest of the recipe as written except that I allowed for a cooling time of 3-4 hours to allow the flavors to marry. The result was far better than the muffins at my favorite bakery. The aroma of the blackberries, bananas, and vanilla was intoxicating, and the surrounding cake perfectly sweetened the blackberries.
    Thanks again.

Stephanie: Thanks so much for this recipe. I needed quick breads for a function we do every year at the uni I work at in Japan. Home baking can be a challenge here as the ovens are small and some ingredients are either unavailable or prohibitively expensive. This did the trick on all fronts and freezes, so I could make several loaves in advance, another must. Wonderful texture, rich banana flavor, and easy to freeze and thaw. A godsend for people who are busy but want to put together something sweet for others without being so stressed they want to pull their hair out. =]

Hi, Stephanie! I enjoy your recipes, and this banana bread recipe is one of my favorites. Like many great recipes, it lends itself to good variations. Starting with your recipe, I removed the spices and nuts, doubled the vanilla, and added blackberries. The resulting banana bread smells like banana pudding; however, the combination of bananas, berries, and vanilla make this bread taste a little like a Rum Runner cocktail. I find it best to let the cake age a few hours after baking to allow the cake to sweeten the berries. Thanks again.

It still tastes good but I have made banana bread pudding...LOL. I will not be doing that again....LOL.

I just made this with roasted peanuts, only because that's what I happened to have. The flavor of the peanuts is sort of overrun in the finished product by the bananas and the cinnamon. So, for the record, peanuts are probably best used in something else. I do like the crunch they added to this bread, though. The recipe worked perfectly and produced a bread with a nice texture.

This has been my go-to recipe for banana bread for little while, now, and I think it's great! I used to use one from my 'Joy of Cooking' cookbook, but this one is much better. I do prefer light brown sugar as opposed to white, though. Also, the cookbook mentioned the option of adding lemon zest, which I think is a nice touch if you have a lemon handy.
I like your Canadian accent: "aboot."

Hi Stephanie! I've been using your recipes for years, I love them! You're always so precise with your instructions, it's hard to go wrong. :) I made this loaf today and it tastes amazing, but mine is too moist. It's definitely cooked. I had to use Stork instead of butter, as I didn't realise I didn't have any butter (Stork is a brand of margarine in the UK made for baking), and I noticed before it went in that my cake mixture was wetter then yours (I also didn't put nuts in). Do you think it was the butter that made the difference?
