- Discussion with Q&A from John Kimmich, head brewer at The Alchemist in Vermont, famous for his Double IPA - Heady Topper. In this hour-plus of footage, John discusses not only his personal journey through brewery, but offers homebrewer-friendly tips and advice on all elements of brewing specifically as it relates to brewing hoppy beers. Footage shot in October 2013 while visiting Nashville, TN for the Music City Brew Off (which will be the focus of a entirely separate future episode of C&B). [Original postdate: March 7, 2014]

I just flew to Boston and made the drive to Stowe, VT to attend the Alchemist 20th Anniversary party.
I love that this man and his dream are still going strong 🍻
No joke? That sounds absolutely fantastic!
@@ChopAndBrew thanks for the video. I saw John Kimmich in the parking lot at opening of their first day of their anniversary celebration.
I had a little beer geek moment, and wanted to approach him for a picture, but decided not to bother him.
It was very interesting hearing him explain the history of The Alchemist in this video. 🍻
I have watched this several times and just watched again....50-56 min mark....love that guy and his outlook on employees....I would work for him in a second

"We do what we can"-John Kimmich
And we can what we do! Hahahaha.
Awesome video, thanks! Cheers!
This was awesome.
Thanks for this!
I fully expected to fall asleep watching this. But the way he talks about beer makes me want to go I'm the basement and work on something beer related and open own place soon
Neat.
I grew up with California Cooler in the early 80's.
Mike Crete and Stuart B. did a great job of making many wine coolers that even Gallo today with B&J they still make a standard with unknown competition.
Study the fermentation process you will prosper. :-)
Insane awesome video! Keep it up.
Brilliant... Looking forward to this
I love that C&B fans post great comments even BEFORE watching it. Did it pay off, Jonathan?
ChopAndBrew great episode Chip, and a great insight from John Kimmich. Looking forward to more C&B
What fun. Good to hear from the Alchemist himself. Thank you so very much. Loved this episode. Five stars Chip. Didn't seeing all of those Heady cans make you thirsty? Loved that John wanted us to drink Heady right out of the can.
Thanks for posting this. Really inspirational and interesting 🍻
We love that people still finding it important and informative. Cheers!
AWESOME! this video changed the way i think about my brew days! no disrespect to all of the Chop and Brew videos and Brewingtv videos that helped me get a start to all grain brewing and advance into making awesome beer... thanks for posting this Chip as i doubt i will get to sample Heady Topper anytime soon down here in Perth, Western Australia!!
Fantastic episode! Many thanks for publishing it. PH control is my next learning mission. Chop for chop.
Chip.....Awesome....totally inspiring video that reminds me that "I" can do it !!! I'll be watching this a few more times .
I love you chip
What a cool guy
I am big on recycling and had to laugh and agree maybe it will take harsher language to get people to recycle, although many recycle cans because they get money from the aluminum. I enjoyed this video very much, GREAT information as well as being entertaining! I found a local craft brewery near me because of my recycling advocacy. I attended a "How to Make Home Brew" at my local food cooperative in 2011 where I was introduced as the bag lady because I make totes from coffee bags and feed bags. The brewmaster asked me if I could make totes from their grain bags. I said I would try and that launched me into a wonderful relationship with the local brewery because the owners of the brewery are members of the brew club and they saw the totes and asked me to design totes for their growlers. I been making totes for their gift shop ever since!
Who doesnt wanna hang with this guy glad I live 2 mi from Vermont pain in the balls def a New England term IMO
Awesome
Damn, all that Heady Topper just wheeled in like it was nothing ;)
Oh hey, Nitch! ;P
Just passing through on my weekly viewing. :D

Pretty cool, enjoyed the second half q&a section. Keep those videos coming Chip. Any news on the 1000 batch?
Hoping to post it as one of the next 2 or 3 episodes. Sorry for the wait. But it will be worth it. If you contributed to the trip, thanks for the support!

I've never before wanted to brew just one beer for the rest of my life. Sweet video, thanks!
Where do I sign up to work for this dude? Great video. Great beer. Great employer.
Thanks for this great footage!! It would be awesome to meet you next time you're in New York City. I also post homebrewing videos on my RUclips channel and blog. Cheers!
Awesome!
Amazing video. Thanks for sharing. I still don't understand what he means at 01:03:06 . Oversparging does produce astrungency but does John sparge or not.? He says dont sparge over 2-3 Plato but then he says he sparges 4-6 but a smal beer is left in the mash tun. I'm quite confused
I believe he is saying they sparge but stop the runoff at a much higher gravity than other breweries might to ensure they don't get to that diluted and possibly tannic state. He says you could practically make another small beer with the sugar they sacrifice by cutting off the sparge early.
Does this help?
@@ChopAndBrew so this means to use only half of the sparge wtaer what you should use or even nothing?
thanks for the fast answer.
@@ChopAndBrew Yes
That was awesome Chip, now over to chop&brew.com for a t shirt.
I see the order. Heading out to you in the morning, J Corni!
chip was that you at 1:05:20?
You know it. Always gotta try to bring it back full-circle to homebrewing!
What yeast is he talking about at 39:00 and where can I buy it?
Many labs have an equivalent strain now. Imperial Barbarian and Omega British Ale V are the first two that come to mind. I think White Labs calls it London Fog?
@@ChopAndBrew Thanks!
No one's drinking it from the can dammit!
I fell in love with Heady Topper while visiting Vermont this month; thank you! ruclips.net/video/8aOMr55f_eA/видео.html
Great video. Can’t figure out all the bleeps. Shit, fuck, etc are bleeped, but Jesus Christ and God damn are not. Weird.
Bill Richards Interesting. I see what you're saying.
