Ingredients and preparation:
1.4 kg pork loin
Salt
Black pepper
1 large onion
2-3 tablespoons cooking oil
About 300 g fatty pork or grilled sausages (Italian or similar)
½ tsp ground coriander
1/3 tsp ground fennel
½ tsp garlic powder
1 apple
Peel of 1 lemon
Juice of ½ lemon
2-3 tbsp breadcrumbs
2-4 tsp dried sage (to taste)
A bunch of parsley
3-4 onions
Bake the meat roll for 20 minutes at 230 °C
Then reduce the temperature to 190C and bake for about 70 minutes
Or until the internal temperature of the meat roll is 71-74°C
Let the roll rest for 10-15 minutes
It is very tasty!

This will be a great treat to enjoy when friends visit this weekend. Sharing new and tasty dishes with old friends is always a great way to reconnect and reminisce. My mother always lived trying rolling the meat to be cooked whenever she had the chance. However, she would usually use salt and pepper while stuffing the meat with lemongrass. She tried one of the rolled meat dishes, she began stuffing different things in the meat. While my brother is more daring in using similar method of meat preparation by adding pulled chicken or filleted fish as stuffing, though he is yet to share his experiments. This dish will be of great help for him to learn.
