I'd say that this was a good update, though I will say I'm probably not going to collect every Memory Token on each Map again, for future playthroughs I'm sticking with collecting the minimum I need for every conversation and story advancement like I always do. Definitely going to be replaying the game again on New Game Plus in the future, especially since you keep all your skills including the Spin Dash on that mode, looking forward to Update 3 whenever that comes out later this year. Pro tip for anyone playing the Action Chain Challenges with Level 1 strength or you're playing on Extreme Difficulty, max out the score multiplier to 256 and you get a lot of points from doing Air Tricks, Dash Pads, Rings, Power Boosting and Dash Rings, or even Homing Attacking balloons, each level with an Action Chain Challenge has some convenient spots to get a ton of points. Generally you'll find most of these in a lot of platform-heavy locations on each island, and on occasion you can defeat enemies that take 1 hit to defeat to raise your score.
Yeah, it’s definitely not easy, at least on either the hard difficulty and especially the extreme difficulty. It is easier if the game is set to the Easy difficulty, where the S Rank requirements are more easier to obtain.

The Spin Dash is the definition of speed running in this game, lol!
Personally, it wasn't easy. Not all of the S Ranks can be achieved on the first try.

You’ll need to find new koco to talk to elder koco to allow you increase your boost meter
