This version is wrong. The correct version is to just add water and leave the cooked rice overnight . You can add salt and have it in the morning without adding curd. What this lady has made is curd rice. Not a fermented probiotic
Yes.... You can just add water (prferably boiled and cooled to room temperature beforehead) to cover up the cooked rice ....put over lid and let it ferment overnight..... Next morning you can add green chillies, salt and little bit of lemon juice ....Also you can add almond milk/curd, coconut milk /curd for overall nutrition

In Rajasthan, we use leftover chapati/bajra roti , soked in dahi or butter milk.
Yes we too hve leftover bajri or wheat roti soaked in buttermilk wth a tadka on top but there is no fermentation here so it is hardly probiotic.
