    In the anime Naruto orders his tonkotsu ramen with miso so that part is authentic. Everything Guga did seemed authentic except for the beef bone and no aroma oil.

    Beaten with a rolled up newspaper? Man, Uncle Roger's parents were soft. I got hit with a Chinese Feather Duster (if you know, you know).
    I love watching Guga cook food. Some of his experiments are crazy, but more often than not he can make it work.

    A very good thing i was told some years ago is "Ramen is all about being a local dish. Whereever you are, you will get another kind of ramen because you're in another place".
    So according to this, i wouldn't even mind to call everything authentic Ramen as long as it's made from stuff from your region that fit's your place of living.
    (But don't call it something like "Naruto Ramen" - just stick with "My version of Ramen")

    Actually. the original tonkotsu ramen (Hakata ramen) uses thin noodles, so as to create more noodle and soup ('that's the technical term for the broth + tare concoction) action. Another reason is so because the cook faster, as Hakata ramen started from street food for after work drunk salarymen.

    Coming from Japan, Guga did a pretty excellent job here. Roger said you can't just put miso into the water but Japanese people would definitely beg to differ. It doesn't look like the miso you get here, so maybe it's not the same, though. Idk. The only thing I would do differently is putting the pork in a pan while it's in the smoker. It would let the pork marinade in its own juices while cooking. Smoking might not be absolutely authentic but it is definitely going to add something great.

      It's awesome to get your opinion, honestly cooking is about innovation. Imagine if someone didn't ask for meat inside bread and sandwich was never created. I know this restaurant in Japan sells Chicken Sushi, here in the U.S. it would be dangerous due to problems with our chicken. In a restaurant setting maybe it's difficult but where i work we mess around with random Sushi ideas non are Authentic but taste great.👍

    11:25 I think this shows that making food for a RUclips video is different from making actual food for eating. All those juices look nice for the camera but ultimately, those juices are just being lost to the cutting board. Leaving it alone and letting it rest overnight is key to locking those juices in the meat until you can slice it when it's chilled and then that way the juices go into the bowl rather than cutting board.

    I'm not an ramen expert, but if I was going this route i might have smoked the marrow bones or the ribs and used a good chili oil. I have a mostly French/Italian/South American background. Uncle Roger would put his leg down. I also would have roasted the veg as well. But I am Trying to master some authentic Asian dishes so i love these videos. I always take something away from these posts and I'm going to check out the Ramen guy. I know how to make fresh ramen properly but when it comes to stock my French side always almost takes me over without thinking about it.

    Also it's good that Guga made dashi broth but kombu should never be in hot boiling water it needs to simmer gently or leaving it submerged in water for a long period of time so the kombu gets soft and the water is infused with the kombu otherwise putting kombu in boiling water makes the dashi sticky.

    for ramen you usually do want the aromatics in the last hour, since the taste they give off after one hour is usually the one people want (when you leave it for too long it gets weaker and also less fresh/vibrant? and darker but that's not really a thing *most* ramen chefs want)
    ALSO, if you're going to react to a video from The Way of Ramen, i'd suggest one of the reactions, maybe the one to Joshua Weissman's tonkotsu ramen. those videos tend to give a lot of info on various ramen related topics

      Uncle Roger channel is a reaction channel that started about fried egg rice, and now he is reacting to anything Asian food, while sometimes doing some cooking, like when he did a carbonara pasta once

    Chashu and char siu were the same thing chashu was just changed to braised because its more convenience. if you see takeaway they often braised the pork and then deep fry to mimic barbeque

    Hmm i think you should consider putting both Uncle Roger and Gugas video very early in the Show more of the description field.. even if you get plugged by a brand they are the primary focus of ur video and is the reason you can make this video. But i rly like the format of you watching Uncle Roger videos cus its the perfect amount of comedy and facts. Im sure over time i will increase my cooking skill just knowing these basics.

    Narutos ramen is technically a miso base with extra chosu but i think guga wanted a richer broth and thats why he went with tonkotsu base with miso added for not only his personal taste but Angel's as well

    You know what's funny? I made my first ever Ramen today. It is now resting in the fridge until tomorrow. And here I see you react to a Ramen video which I loved. BTW Jamie did it again.       @@Nevae_696 It tasted terrible I failed miserably. I wanted to have Pork with it but I didn't find something with quality so I went on Beef instead. Since then I have tried few more times and eventually succeeded. I have a problem to find here top quality Pork because Pork in Israel even at his best is among the lowest quality in the world.

    Kinda wish you told Nigel when you met him in person about your fried rice video so that Uncle Roger can review it. But I get it, I wouldn't want to do a shameless plug when I meet someone as big as him for the first time. Unless of course the fried rice video wasn't made when you met him.     Neighbour has a smoker...lets us know every time he smokes something. So I open up the windows! Unfortunately all I have is a smoke box in the BBQ itself. Some flavour, but not as deep/cool as a real smoker. BUT, it does make great smoked salt, which I use on basically everything...

    I made sinigang previously. If I recall how my parents make it, they boil the meat, remove the scum, and dump the water used to boil the meat. Out of the RUclips videos I watched, I decided to brine the meat so blood will be extracted, then bring it to a boil. There’s still some scum that appeared, but not a lot. I didn’t change the water after the boil though. Should I have dumped the boiled water?

    I've seen a bunch of terrible Ramen videos on RUclips now. As far as authenticity goes, this is one is pretty damn good.
    The miso should have been made into a tare. Using a miso-based tare with a tonkotsu broth is fine, but if you are making it the traditional way, they need to be separated.
    And yeah, don't boil miso...
    It's missing aroma oil.
    There was only a glimpse of it in this video and I don't remember if there was more in the original, but it looked like he boiled the kombu and bonito flakes when making dashi. That's definitely something to avoid, as well.
    But yeah, I actually think this is fairly authentic. Simplifying the tare to just miso and pre-mixing it is something you would never do in a restaurant, but let's be real - miso alone is plenty flavourful and salty, so it actually does make a decent tare all by itself. And at low volumes you don't need to care that much about keeping it separate and mixing it in the bowl.
    I personally do keep my tare and broth separate, but I also tend to go for shouyo Ramen over miso. (And a chicken chintan broth)
