So, my mom uses it, (she uses the turquoise one, i think it's from loreal) and she uses it quite sparingly, only on the front part line and the swirl at the back of her head a little bit, but yes, it does come off during the day, so she applies it new every morning but for her it doesn't stain the pillows. I think if you'd use more than she does and you're worried it might stain, you could try to brush it out at night? Also, it stains the little balls at the end of the brush... teeth? So if you have a very favorite brush with light colored brush tips, maybe don't use that.

My grays are silvery white so they actually blend in really well with my roots that are ashy dish water blonde let's me go longer inbetween highlights.
