I discovered quiet a bit of Kanto by bicycle. So I think I can tell you some nice places/things to do, too. ^^
Enoshima: This area is good for some nice train rides. There is the Shonan monorail and also a train following the coastline from Enoshima to Kamakura. Close to the monorail station is the Ryuko-ji with a pagoda. btw. There is also monorail in the city of Chiba. The rocks of Enoshima are a good looking fishing spot (sunset when the tourists are gone)!
Speaking of Kamakura: There are alot of shirnes in Kamakura, but you just should not miss the Sasuke Inari jinja and the Zeiarai Benzaiten Ugafuku jinja. I personally like the Jochi jinja alot, too. If you are somewhat mobile in that area (bicycle, car) and want to see a nice scene, than you should take a ride to a little bay south of Kamakura in the town of Hayama. Around Moritodaimyo jinyou can see a small torii on the water, Enoshima and in the distance Fuji-san. That view is perfect for a sunset! You also can visit the small torii by canoe.
Kawagoe: There you can somehow experience a townscape like it was in the Edo period. There is also a small alley called „candy street“ whereyou an buy candy the old style. ^^
Ogawa: There you can find a n old and small already closed (but partly visitable) elementary school building at the end of a sweet valley. The school was used for some TV productions, mostly known for the sweet series „non non biyori“. If you want to enjoy japanese landscape, go there.
Chichibu: South of Chichibu you have a couple of caves you can visit. One is at the edge of Chichibu (train station nearby), one is further south in a small valley (Nippara limestone cave). A little bit west of Chichibu you can find a site where you can see a lot of icicles (see „misotsuchi no tsurara“).
If you are into it, you can visit the Tokorozawa aviation Museum and park. They have some old planes there.
Or just play some baseball on the many baseball fields alongside the Aakawa. ^^
There sure is alot of more stuff to do.
