That was my only hesitation but they are so good looking when they grow out it’s hard to say no. In your case I understand when you are breeding to make a profit why you wouldn’t want to wait that long. It also gives me time to convince my wife to let me get another tank to breed them lol.

You can keep trout. Just make sure to start with very small fish so they learn to not be spooky at every move,
I did some research and found out that some species are exceptionally cold hardy. I would produce some cold hardy strains.
