Lori, I know this is long after you posted this, so you may have heard this already. When we moved to Newark (NE Ark) about 25 years ago, I couldn't believe the amount of people who talked about their methods and recipes for making tamales. I was raised in the panhandle of Texas around a lot of native Mexicans so I was very familiar with tamales. But Arkansas? yes! Turns out that in Newport, there was a very successful restaurant that specialized in tamales, and they were good! It was "Lackeys". Mrs. Lackey was the inventor of the family recipe and you saw their tamales in all the local grocery stores. Newport is not too far from you, so I'm kind of surprised you hadn't heard of that local brand of tamales. When my girls were little, I read a book from the library to them about a family making dozens (hundreds?) of tamales for Christmas and one of the mothers lost her ring in making the masa part. So, when I saw you had your rings off, I thought about that little book and then you said that about remembering to take them off. lol!! What a great video. Tamales sure take a lot of time to make. No wonder it's a Christmas treat!!
Just wanted to let you know that I've made these tamales twice since watching your video. The first time they took forever to cook because our steamer was not big enough & I squeezed them in to tight. They were very good after they finally cooked. We recently bought an Instant Pot & we steamed our second batch in the pot & they turned out terrific! I cooked my meat in the Instant Pot and that was a real time saver step. Thanks so much for this great recipe.
We grew up eating these every Christmas! My mom would make them every year - so good!! She is now 86, so Mom makes the fillings and all of us and our children soak the husks, spread the masa and stuff 'em - SO fun and SO good!!! (We are native Texans who live in Houston!)
Her videos are very instructive and very delicious. She has a very peaceful vibe and spirit about delivering her instructions. Also, she does each step at an easy, processing pace- it’s not hurried and easy to keep up with her. I thank her for her peace and tranquility while cooking😊 Also, I’m a Mexican American and loved her tamale recipe and tips, and I’ve been making tamales all my life.(70 yrs young)
This really brings back memories. My great grandmother, a Missouri farm raised lady, (wherever she learned to make tamales I’ve no recollection.). but she made them for the corner tavern in Quincy, IL! They sold out very quickly. So so good. I’m 71 yrs, and she passed away in 1973... but what a memory to recall!
The first time i ever tried to make Tamales i watch every mexican lady on youtube make them. I learned how to make them from a lady that didn't speak english. On spreading the mesa i used a 4 inch tape & bed knife that made it work really fast. I get all my tamales ready before i put into my steaming pot. One thing i need to point out is i made 12 dozen and keep out a couple dozen a froze the rest. Lol don't do that because when you re-steam them they turned out watery. So the best way is only steam what your going to eat. Then freeze the rest then when you need more then steam them. And a big thanks to you & your husband from Tyler, Tx Great job!
As a Mexican woman, I learned how to make these as a young child with my Grandmother, my Mom and her 5 sisters. It is indeed a huge undertaking and we did it as an assembly line. I can tell you, the masa spreader is BRILLIANT! Going to get one of those!!! Thanks for the vid!
Wow. You make 'em almost exactly like my wife does! Spreader and everything. Last time she made them, (13 dozen) I stole a bit of the prepared masa, rolled it into a few little balls, shoved a jalapeno in some, & a little meat in others, & dropped them into a deep fry. The fam went nuts over them!
Hey Lori! i am ADHD and stopped taking ritalin after a few years after being diagnosed and in my 50s. i've always been hyper or "bubbly" and admire mellow people like you. i told the doctor 'well too bad, i guess everyone will just have to deal with my bubbly self because i aint takin that ritalin no more!' Anyway, you are so mellow it calms me way down just to watch one of your videos and listen to you. Especially love your recollections! Beautiful, never change.

My nephew was 4 when diagnosed with ADHD. They put him on Ridlin and he developed Tourettes Syndrome because of a reaction with the meds. Stay your bubbly self, you made a good choice.
I remember when I was a little girl, my grandma, my aunts, and my mom would get together and make tamales during Christmas! It was so labor intensive they formed a production line. My grandma would work for two days to make those tamales. Like you she made the meat one day and assembled the next. Thank you for sharing this, it really brought back memories 🥰🥰
Thank you for sharing your recipes. I came here from your tamale pie recipe ...It looked so yummy, I'll be making it tonight for dinner. Here's a tip for those who have an iron tortilla press and don't want to spend money on a spreader: The lady who showed me how to make tamales used an old iron tortilla press to spread the masa. You just lay the husk on the press, put your glob of masa on the husk, cover with a square of wax paper (the size of the press) and drop the lid to spread it. You don't "press" it. The weight of the lid spreads it out evenly. Peel the wax paper off and reuse for the next one. Replace as needed. I find it goes really fast when working alone or as a task easy enough for the younger helpers.
MASA is Spanish for DOUGH, it's cute how she says "Masa Dough" it's like saying "Dough Dough". If I didn't know any better, I would think they are Mr & Mrs "Moreno" (because Moreno is Spanish for Brown) I've seen lots of folks making a Tex-Mex or an Americanized version of Tamales, but this was the first time I've seen white folks making "100% Authentic Mexican Tamales". My maiden name is Moreno and my dad's nickname was Mr.Brown by his grandkids and neighbors lol. I absolutely loved this recipe and will give it a try myself. This video has the feeling of watching one of my Tias cooking.

I'm in Dallas. Used to work with a manager in training from New Jersey and when he returned North, I had to periodically mail him a dozen packets of 2-alarm chili mix. LOL
This is a REAL process but a good tradition to try n start! So nice to see Mr Brown work that trowel/spreader on the husks! Every job needs the right tool. Sheet rock work taught him skills . He’s got the knack! Your meat n sauce look delicious!
After he retired, my husband made the tamales. Only made them after Christmas, and used leftover turkey and ham. He mixed the meats and they always turned out really well!! We froze them and hoped they would last. Nope. Never happened: we ate them fast! Delicious!!!
I was born and raised on the Northside of Houston. My neighbors make tamales about twice a year, once being around Christmas time, and they always make a lot! I can eat me some good homemade pork tamales! I’ve never attempted to make them myself because I’ve always heard it’s a long process! I never asked what all goes into making them, but now I see what they mean when they say, it’s a process. Bless you for taking the time to make them for your family, and for getting this on video. So happy I found your channel, a lifestyle of the heart! My favorite food is Mexican, especially Tamale’s! As a small child I lived in Vicksburg, MS and remember my father buying Tamale’s from Solly who sold them from a cart on the corner. The decedents still sell them in a storefront now in Vicksburg. Visiting Solly’s is a must when we visit there but how I would love to make them. You did a great job explaining the process, I think it’s time I give it a try! Thank you so much for sharing! 💕

Wow I appreciate this video so much. I’m in Indiana, near Chicago and grew up eating homemade tamales on holidays. We’d gather around the kitchen table and work in an assembly line fashion. Really good memories. I’ve never made them myself and I’m almost 60! I think it’s time !

I learned to make tamales from a dear friend, and even though it's a time consuming project they are sooo much better than store bought tamales. My friend would buy the masa dough from a Mexican restaurant, so I'm glad you showed how to make the dough.I've noticed with masa it soaks up a lot of liquid.
Oh NO!!! I have been steaming my tamales for only 30 minutes!! I have always bragged about how moist and tender they were! Well, I guess so if I was serving and eating them RAW! I had no idea. I know that steam cooks really hot, and I just figured that was all they needed. Thanks for setting me straight. 30 minutes is a long way from 1.5 hours!!!!

I am Mexican. Love you love our tamales ! But have you ever had Salvodorean tamales ? It's a different texture , flavor. OMG ! when I lived in Los Angeles I would buy them from the corner tamale lady then go get fresh 6in French rolls or Frances how they are known in El Salvador. Cut them open , put the tamale in there like a sandwich, put some tapatio sauce for spice ! OMG it's a little piece of goodness 😙
Miss Lori, this video brought back many memories for me! My Granny and Mom would make these a couple of times a year, taking two days to cook the meat and grind it by hand, and the second day they would make the tamales. Mind you , this was back in the late 50’s and 60’s. They always did beef and pork together. Everything was pretty well the same as you, except Granny always used white cornmeal and the strained meat broth and salt, for the outer layer instead of masa flour. She would make it like a thick slurry to spread on the husks, and then folded both ends up and lay them in pots with a plate on the bottom and top to steam. There were people in the community that would buy them from her, get this, for $.50 a dozen! After doing this for many years, she went to a dollar a dozen, which didn’t go over well, but she still sold all she wanted to! Those were the best tamales I’ve ever had. Thanks for the video!

That's where the masa gets it's flavor ! No broth, no flavor , just plain masa ! Salvadorean tamales are extremely flavorful , the masa is the king the meat is second in flavor and structure. Tamales are so , delicious and so bad for the us , but ones a year in Xmas time it's ok to splurge 😂
I've lived in Texas 45 years and I have never learned how to make tamales! Thank you for showing me this. It is time consuming but I think I can definately do this! My Native friend would spend the holidays with her twin who lived on the reservation. They made dozens of both beef & pork tamales. She shared a dozen with us & they were so yummy! Theirs were wide & the husk was folded & tied, I think. I bought masa once but it seemed more than I could handle. I couldn’t believe my eyes and ears to hear you say you were going to make tamales! I always said my mother’s were the best but I lost the instructions she gave me 30 or 40 years ago. @@WhippoorwillHoller You can make one out of a plastic cover from a coffee can !! The ladies at the local tamale factory use them. When I saw it I asked, because I always used a large spoon !! This contraption works great, and its not hard to make plus darn near free if ya buy coffee!! Luv Ya. !!
My mom would chunk, not shred, her pork , then fry it and boil it, and make the sauce the consistency of gravy and mix the two together. The masa, we make with lard and broth from the pork, too. They look yummy.

My family is from the southwest. My sister told me about your page and said you make authentic tamales. I could only get as far as you taking out the pork from your slow cooker. I'm on a restricted diet for an ulcer, so I almost cried at how delicious it looked. When I'm over this medical issue, I'm coming back and watching the rest. If I had watched it all right now, I KNOW I'd find a way to cheat on what the doctors told me.
Love the love that goes into making tamales. It is definitely an adventure! Grandma used pork, beef and chicken for meat. All 3 together. We had a lot of good times asking when they would be done. Grandma would just smile and chase us out the kitchen. When she finally said come and get it, it was a stampede to the table! Like you she made sauces for the tamales. Well I'm from South Texas 🔥🌶️ and I am proud of you both and just enchanted to see people that are not Mexican make tamales and do it with so much care💕 ,in fact better than some Mexican people I know ‼️ and I'm from deep south Texas on the border to Mexico. Reminds me of my Grandmother and her crew and my Grandfather that would bring fresh meat like pork and beef or deer and javelina my grandmother like to mix the meat . Thankyou 🙏
Wow...that masa spreader is amazing. That's the hardest part was spreading the husks, I'm going to order one. I run the cooked meat through the grinder attachment of my Kitchen Aid mixer. A couple years I smoked the pork to about half done on my smoker then finished off in my Nesco Roaster oven to get the broth. A friend of mine would add a treat to each tamale like an olive or a thin slice of pickled carrot, or a slice of chili pepper, so it was fun to see what you'd get when serving them up. Tamalies freeze and microwave very well. I'll definitely be making some as soon as I get my smash spreader. Thanks for the video.

I made these, completed them today. It’s the first time I have every made a tamale so my technic needs improvement; but... OMG!!! These are the best tamales I have ever eaten hands down. I don’t think there is a Mexican restaurant here in the mid-west that could top these! The flavor is stellar! Thank you so much for sharing this recipe. I love tamales! I've seen tamales cooked in a red "sauce" also. I tried making tamales once, but decided it was a whole lot of work. Yours look really good.
I bet those are extra spicy with those kind of dry peppers.we always put the lard in the masa before we add broth and seems to do great that way for us.
I'm from New Mexico and we love our tamales. We use New Mexico Hatch red chile in our tamales. There are two ways of making tamales in New Mexico that I've seen - your way is one of them and the other way is usually made by Spanish and Native American families (tamales are thicker and meatier and are tied at both ends). My family uses lard and doesn't use any baking powder. Tamales are usually made at Christmas time and all the family helps to make them as we make up to 25 dozen that day - its a long and tiring day but worth it. Thanks for sharing.
I made tamales once 25+ years ago, never having seen em made or a recipe I winged it. I made pork, chicken & beef. I seasoned them to taste, added seasoning to the masa & chicken broth. I made a mess Makin the tamales and made them fat lol! I took em to my experienced tamales makin friends & told its my first attempt. They laughed because they were lumpy and fat, didn't think they'd be good. Well those ladies about fell over & admitted they were better than theirs. I haven't made any since, but seeing that spreader now I want to try again. GREAT VIDEO!
My husband and I watched this video twice this morning because we wanted to make sure we had it straight. We also watched the biscuit recipe video only to find we needed baking powder and baking soda, so he went to the store a bit ago and made sure to get those items. How cool. The first time i ever tried to make Tamales i watch every mexican lady on youtube make them. I learned how to make them from a lady that didn't speak english.
On spreading the mesa i used a 4 inch tape & bed knife that made it work really fast. I get all my tamales ready before i put into my steaming pot. One thing i need to point out is i made 12 dozen and keep out a couple dozen a froze the rest. Lol don't do that because when you re-steam them they turned out watery. So the best way is only steam what your going to eat. Then freeze the rest then when you need more then steam them. And a big thanks to you & your husband from Tyler, Tx

As a Mexican woman, I learned how to make these as a young child with my Grandmother, my Mom and her 5 sisters. It is indeed a huge undertaking and we did it as an assembly line. I can tell you, the masa spreader is BRILLIANT! Going to get one of those!!! Thanks for the vid!
Wow. You make 'em almost exactly like my wife does! Spreader and everything. Last time she made them, (13 dozen) I stole a bit of the prepared masa, rolled it into a few little balls, shoved a jalapeno in some, & a little meat in others, & dropped them into a deep fry. The fam went nuts over them!

Hey Lori! i am ADHD and stopped taking ritalin after a few years after being diagnosed and in my 50s. i've always been hyper or "bubbly" and admire mellow people like you. i told the doctor 'well too bad, i guess everyone will just have to deal with my bubbly self because i aint takin that ritalin no more!' Anyway, you are so mellow it calms me way down just to watch one of your videos and listen to you. Especially love your recollections! Beautiful, never change.

My nephew was 4 when diagnosed with ADHD. They put him on Ridlin and he developed Tourettes Syndrome because of a reaction with the meds. Stay your bubbly self, you made a good choice.
I remember when I was a little girl, my grandma, my aunts, and my mom would get together and make tamales during Christmas! It was so labor intensive they formed a production line. My grandma would work for two days to make those tamales. Like you she made the meat one day and assembled the next. Thank you for sharing this, it really brought back memories 🥰🥰

Here's a tip for those who have an iron tortilla press and don't want to spend money on a spreader: The lady who showed me how to make tamales used an old iron tortilla press to spread the masa. You just lay the husk on the press, put your glob of masa on the husk, cover with a square of wax paper (the size of the press) and drop the lid to spread it. You don't "press" it. The weight of the lid spreads it out evenly. Peel the wax paper off and reuse for the next one. Replace as needed. I find it goes really fast when working alone or as a task easy enough for the younger helpers.
MASA is Spanish for DOUGH, it's cute how she says "Masa Dough" it's like saying "Dough Dough". If I didn't know any better, I would think they are Mr & Mrs "Moreno" (because Moreno is Spanish for Brown) I've seen lots of folks making a Tex-Mex or an Americanized version of Tamales, but this was the first time I've seen white folks making "100% Authentic Mexican Tamales". Parece que tus tamales son deliciosos, Gran Video!

After he retired, my husband made the tamales. Only made them after Christmas, and used leftover turkey and ham. He mixed the meats and they always turned out really well!! We froze them and hoped they would last. Nope. Never happened: we ate them fast! Delicious!!!

I was born and raised on the Northside of Houston. My neighbors make tamales about twice a year, once being around Christmas time, and they always make a lot! I can eat me some good homemade pork tamales! I’ve never attempted to make them myself because I’ve always heard it’s a long process! I never asked what all goes into making them, but now I see what they mean when they say, it’s a process. Bless you for taking the time to make them for your family, and for getting this on video. As a small child I lived in Vicksburg, MS and remember my father buying Tamale’s from Solly who sold them from a cart on the corner. The decedents still sell them in a storefront now in Vicksburg. I learned to make tamales from a dear friend, and even though it's a time consuming project they are sooo much better than store bought tamales. My friend would buy the masa dough from a Mexican restaurant, so I'm glad you showed how to make the dough.I've noticed with masa it soaks up a lot of liquid.
Oh NO!!! I have been steaming my tamales for only 30 minutes!! I have always bragged about how moist and tender they were! Well, I guess so if I was serving and eating them RAW! I had no idea. I know that steam cooks really hot, and I just figured that was all they needed. Thanks for setting me straight. 30 minutes is a long way from 1.5 hours!!!!

I am Mexican. Love you love our tamales ! But have you ever had Salvodorean tamales ? It's a different texture , flavor. OMG ! when I lived in Los Angeles I would buy them from the corner tamale lady then go get fresh 6in French rolls or Frances how they are known in El Salvador. Cut them open , put the tamale in there like a sandwich, put some tapatio sauce for spice ! OMG it's a little piece of goodness 😙
Miss Lori, this video brought back many memories for me! My Granny and Mom would make these a couple of times a year, taking two days to cook the meat and grind it by hand, and the second day they would make the tamales. Mind you , this was back in the late 50’s and 60’s. They always did beef and pork together. Everything was pretty well the same as you, except Granny always used white cornmeal and the strained meat broth and salt, for the outer layer instead of masa flour. She would make it like a thick slurry to spread on the husks, and then folded both ends up and lay them in pots with a plate on the bottom and top to steam. There were people in the community that would buy them from her, get this, for $.50 a dozen! After doing this for many years, she went to a dollar a dozen, which didn’t go over well, but she still sold all she wanted to! Those were the best tamales I’ve ever had. Thanks for the video!

Salvadorean tamales are extremely flavorful , the masa is the king the meat is second in flavor and structure.

My Native friend would spend the holidays with her twin who lived on the reservation. They made dozens of both beef & pork tamales. She shared a dozen with us & they were so yummy! Theirs were wide & the husk was folded & tied, I think. I bought masa once but it seemed more than I could handle.

@@WhippoorwillHoller You can make one out of a plastic cover from a coffee can !! The ladies at the local tamale factory use them. When I saw it I asked, because I always used a large spoon !! This contraption works great, and its not hard to make plus darn near free if ya buy coffee!! Luv Ya. !!
My mom would chunk, not shred, her pork , then fry it and boil it, and make the sauce the consistency of gravy and mix the two together. The masa, we make with lard and broth from the pork, too. They look yummy.

My family is from the southwest. My sister told me about your page and said you make authentic tamales. I could only get as far as you taking out the pork from your slow cooker. I'm on a restricted diet for an ulcer, so I almost cried at how delicious it looked. When I'm over this medical issue, I'm coming back and watching the rest. If I had watched it all right now, I KNOW I'd find a way to cheat on what the doctors told me.

Love the love that goes into making tamales. It is definitely an adventure! Grandma used pork, beef and chicken for meat. All 3 together. We had a lot of good times asking when they would be done. Grandma would just smile and chase us out the kitchen. When she finally said come and get it, it was a stampede to the table! Like you she made sauces for the tamales. Wow...that masa spreader is amazing. That's the hardest part was spreading the husks, I'm going to order one. I run the cooked meat through the grinder attachment of my Kitchen Aid mixer. A couple years I smoked the pork to about half done on my smoker then finished off in my Nesco Roaster oven to get the broth. A friend of mine would add a treat to each tamale like an olive or a thin slice of pickled carrot, or a slice of chili pepper, so it was fun to see what you'd get when serving them up. Tamalies freeze and microwave very well. I'll definitely be making some as soon as I get my smash spreader. Thanks for the video.

I'm from New Mexico and we love our tamales. We use New Mexico Hatch red chile in our tamales. There are two ways of making tamales in New Mexico that I've seen - your way is one of them and the other way is usually made by Spanish and Native American families (tamales are thicker and meatier and are tied at both ends). My family uses lard and doesn't use any baking powder. Tamales are usually made at Christmas time and all the family helps to make them as we make up to 25 dozen that day - its a long and tiring day but worth it. Thanks for sharing.

I made tamales once 25+ years ago, never having seen em made or a recipe I winged it. I made pork, chicken & beef. I seasoned them to taste, added seasoning to the masa & chicken broth. I made a mess Makin the tamales and made them fat lol!
I took em to my experienced tamales makin friends & told its my first attempt. They laughed because they were lumpy and fat, didn't think they'd be good.
Well those ladies about fell over & admitted they were better than theirs. I haven't made any since, but seeing that spreader now I want to try again. GREAT VIDEO!

My husband and I watched this video twice this morning because we wanted to make sure we had it straight. We also watched the biscuit recipe video only to find we needed baking powder and baking soda, so he went to the store a bit ago and made sure to get those items. How cool.
