Wow. Best ice cream recipe ever. I have been looking for a recipe that doesn’t use heavy cream. Literally everybody uses heavy cream to make ice cream and it comes out so fatty to the nauseating point. So this is really really nice. Thank you very much.
Awesome! Now a request: Last year I was on holiday in Stockholm and a little ice cream shop at Hornstull station sold homemade browned butter and Rosemary ice cream. My heart grew wings and I almost sang opera. I haven't been able to replicate it or find any as good in my own country.
Today I made my own version, I just blended 500g hazelnuts, some sugar, couple spoons of cocoa powder, and about 800ml milk, and 4 egg yolks in a blender for 1 minute. It turned out really thick and really gritty. So I think I had way too many nuts relative to the rest :P I`m gonna try your recepie next. Is the milk powder important tho? like could I just use milk and cook it a bit to dehydrate it?
Reminds me of years ago when I enjoyed some store bought hazelnut gelato. I can only imagine how good home-made must be.
