St Vincent Raisin Roll/Currants Roll (Flaky)

  • Recipe for puff pastry
    1 cup all purpose flour
    1 tablespoon unsalted butter
    1/2 tablespoon shortening
    1/4 teaspoon of salt
    About 1/2 cup of cold water
    1/4 cup unsalted butter to place inside dough.
    *Salted butter can be used.
    For Filling
    1/4 cup raisin (1/2 cup if you wish)
    2 tablespoons sugar
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    2 tablespoons unsalted butter
    *Also you can spread the room temperature butter on the dough instead of mixing it with the raisins.
    One egg and 1 tablespoon water for egg wash. Use half tablespoon water instead. My egg wash was watery with the 1 tablespoon water.

    Thanks Sam. I now know how to do the 'flaky dough...had no idea about this method only the end results of eating the delicious bread.

    I never heard about adding butter to the raisen filling.

      Yes, you can or put the butter directly onto the dough.
