you can use store bought puff pasty for this if you do not want to make the dough.
1 1/2 cups of flour
1/2 cup ice cold water
4 oz cold unsalted butter or 8 tbsp. if you are using salted butter do not add any salt to the flour.
1/4 cup sugar
1 cup currants
1/4 tsp salt
dash of vanilla or almond essence
pinch of nutmeg
pinch of cinnamon - optional

My best friend is from Trinidad. The last time he had a currants roll was over 20 years ago when he left Trinidad. I made this for him last night and brought it over. With some of your Trini meat pie and some tamarind balls. I made dinner for him and his wife. She didn't have to cook and it brought him right back home to his Mother's kitchen. great recipe! it was tricky trying to not let the butter burst the dought but at the end it was amazing. just like the real thing

Beautiful. Do you use self raising or plain flour. Here in the UK, our flour are either plain or self raising. The plain indicates no raising agent on the flour.
I have never seen it made this way. but it looks delish . do you use reg flour? or self rising?

Natasha last weekend I tried making currants roll but after baking the crust was hard. I used 2lbs flour, 1lb butter and 1/2 shortening. The texture was good. The crust was fine like breadcrumb n I used ice cold-water to mix. I really don't know what went wrong. Trying to make this weekend. Thanks

Seems like 1 and a 1/2 cups of flour did not work for me all my butter kept seeping out as I rolled

Tricia Willis do not add baking powder to puff pastry dough , use All purpose flour I cannot say for sure how came flour would turn out.

My top part is the freezer portion, guess you mean the cool part. I made the currant roll today, but the butter got soft and melted through while rolling, did not come out good. Plus I think my dough was not rolled thin enough since I got only one small roll.

Natasha your puff pastry is the bomb! I’ve made meat pies and your currants roll recipe. Turned out great! If I didn’t want to knead flour and use the store bought puff pastry dough...how many layers you suggest I use?
Thank you one sheet may give you about 6 rolls. I've never used the store bought pastry before.
