I once did a research essay on red velvet cake-all of this is really accurate!! But because this is knowledge I never get to use, I want to add a bit; The “velvet” descriptor comes from how cakes before the Victorian era were made with unrefined flour, and were therefore rough and lumpy. Most cakes made with the newer, more processed ingredients of the Victorian era were called velvet, and red velvet sticks because it is essentially an evolution of Red Devil’s food cake, a rougher, older cake, which was a variant on the traditional devil’s food cake in that it contained buttermilk and so was red. Red Devil’s food cake evolved into one of the newer, “velvet” cakes and eventually had its natural red hue strengthened with food coloring. The first recorded instance of red food coloring being added to one of these cakes is in 1960, as one Mrs. Cragle published in the Denton-Record Chronicle of Texas. This recipe spread all over the country in the summer of 1960, and remained as kind of an underground hit until steel magnolias and other events which heightened it’s popularity in the 80’s, and into the 2000s and present day.
I’ll comment down here so anytime someone likes it I’ll be reminded about this magnificent fact ❤ One of the best food history tidbits I’ve ever read, thank you for sharing!

Yes, the refined sugar is of greater concern considering the excessive amounts in many modern diets. However, chronic exposure to red 40 has been shown to cause severe health problems (including damage to DNA) in mice. So the concern over this ingredient is justified to some degree.
To be fair, studies show that red 40 might cause a slight energy boost for select individuals but otherwise it’s inert and just passes through with no issues for the typical person
Yea the video is a slightly fear mongery. Nothing wrong with liking natural but don’t demonize artificial colors when theres no substantial evidence that it’s harmful
Don’t even try to be fair with these people. They’ve already demonized the food coloring and no amount of studies will convince them otherwise. Hell, even in this video they state that they “refused” to make red velvet cake for YEARS because they wanted to “save” their customers from the “excessive” food coloring.
Red 40 is made from a specific insect, which some people do have an allergy to. Yellow 5 is known to cause hyperactivity in children, but the United States doesn't require Kraft to state that on the boxes; only in the UK.
You can use beet powder. This gives a really deep red color with a not large amount and the flavor is sweet and does not overpower the chocolate flavors of the cake

@@RainiiDay7 but cake is made with sugar and not chemicals. And artificial dyes can stay in your system for like a week and increase stress, anxiety, adhd and more. And it isn’t really only every few years, because they are in a ton of stuff. From drinks and chips to even marshmallows. The reason a cake is unhealthy is it just doesn’t serve any nutritional value, while dyes are not made with anything natural and just chemicals. Dyes (especially red 40) are even banned in some countries because of how bad they are for us.
@@keshariacharya6941 so just because something is a color you like it automatically makes it look good? It’s the same thing no matter if it is dyed or not, so why is it more appealing if it’s filled with chemicals?

@jean-francoisdaignault9612 agreed! Sugarologie did a frosting comparison and Ermine did so well for heat tolerance (hello, Southern, lol) and structure and flavor. Seemed to surprise her!
@@melindawedgewood6462 Very interesting. All I know is that particular cake (I think the mellow cocoa flavor) is a perfect pairing with the Ermine frosting. Heaven! and worthy of The Waldorf Astoria. It kills me how everyone has been duped by the cream cheese frosting! That tang is off-putting. Cream cheese frosting goes well with carrot cake, though.
I use a natural food coloring powder made from beet root in the red velvet recipe I use. I'm fortunate to live in a city with multiple markets that have large organic departments with alternatives to things like artificial colorings. It works very well, doesn't leave any flavor, and gives that rich color that goes with the moniker of this cake. Red velvet is my younger daughter's absolute favorite, so I've made a lot of them!
Beets, or maybe pomegranate, those things make a red so vibrant it could blind a man, but beet can come powdered so it doesn't affect the liquid ratio, and the earthy flavor is surprisingly easy to cover up. Also, I remember hearing vinegar was used to bring out a more reddish color in velvet cake, though it has been a while.
Red food coloring is only toxic if you eat about a bowl of pure dye multiple days in a row. Thats the amount those rats were given in that one study. Food dyes are safe.
@@nataleedibos3635 The dose makes the poison. Even water is lethal in large enough quantities. Your body needs nutrients in a proper balance, and is designed to filter out many different toxins in limited quantities. Some things we have a much larger range of tolerance for, and there are certain substances that can kill or do harm in relatively small doses, so research is necessary to determine safe limits, but it's hard to ethically research the safe limits and long term consequences of food and food additives and even scientists have been known to make mistakes or even lie sometimes which muddies the waters.
@@nataleedibos3635I don't even want to explain how silly that sentence is. _Everything_ can be toxic in high concentrations. _Water_ can kill you if you drink too much of it.
When my family moved to Texas, my grandma got an armadillo cake for my dad's birthday with red velvet cake because armadillos are pretty common around here. I thought it was so funny and cool. I'm not sure if it was a reference to that clip you mentioned but my dad loved the cake. Tasted great too.
I have ALWAYS loved chocolate AND cake, I am a sweet tooth. But chocolate cake and chocolate ice cream for me are just meh-awful. But red velvet cake, it is my favourite. Tbf my mum made cocoa cupcakes when i was young and they were lovely but its just too heavy or dry or bitter or idk it just nearly always flops for me, but red velvet reigns supreme
See though there is an difference in taste and it makes me go crazy in how people saying that it tastes better because the red food coloring is making taste different. Like no they have different ingredients and it's not even the same cocoa used in red velvet and chocolate.
The only red velvet cake I’ve ever enjoyed was from an all natural vegan place that sadly no longer exists. They were individually sized with a bit of buttercream and a fresh strawberry. SO GOOD! I still crave it.
I would have just called it brown velvet or dye free velvet. It looks just as appetizing without the color to me. I don't expect my food to be vibrantly colored.

@@AlezarGorewichI know right, there are so many food channels, plenty that aren't being super weird about this.

It’s so bad for you though, and cake already isn’t that healthy. Why does the color matter?
@@omb57 Well if you go by that logic, then it doesnt matter. Since cake, as you said, isnt that healthy anyways. Besides, if its just for a special occasion every 3-4 years then I dont see the reason to care.

True red velvet is also made with an Ermine frosting, not cream cheese.
God bless you for knowing this! Drives me crazy when people use a cream cheese frosting.
Thank you! Thank you!
My favourite frosting, and deserves to be better known
I love how we found out how they do it at the end of the video
Yes, I like red velvet cake. It tastes like a bit of chocolate, the cream cheese frosting is so sweet.
Idc about the food coloring at all lol I just love the cake. The moist texture and taste 😋🤤
I don’t care if it has food coloring or none it will always be my favorite
I use a natural food coloring powder made from beet root in the red velvet recipe I use. I'm fortunate to live in a city with multiple markets that have large organic departments with alternatives to things like artificial colorings. It works very well, doesn't leave any flavor, and gives that rich color that goes with the moniker of this cake. Red velvet is my younger daughter's absolute favorite, so I've made a lot of them!
Yes i loveee red velvet cakeeee it will be one of.my.wedding flavors
I just knew we kpop stans would find this in some way. Well RED VELVET the group slayes!!❤
I use vinegar….i thought it was a flavor thing though. Was never really sure.
@IOeste80 I think it might be both, like the person who first did it did it for flavor but the result was a reddish brown
As a Red 40 maxxer, i actually prefer as much food coloring as possible in my red velvet cakes.
I've never had a food coloring-less cake, but unless someone has an allergy, I can't imagine how it would ruin the taste
Why?

Red food coloring is only toxic if you eat about a bowl of pure dye multiple days in a row. Thats the amount those rats were given in that one study. Food dyes are safe.
If a lot of it is toxic that means a small amount is also toxic
@@nataleedibos3635no, no it doesn’t mean that.
Yes and also I hate that rat study because humans aren’t rats! And the only meaningful human studies were also in ridiculously high concentrations

Red velvet is my all time favorite cake!
Idc how much people say it's no different than chocolate cake, it is better, almost always it is more moist, or flavorful, I love it
I have ALWAYS loved chocolate AND cake, I am a sweet tooth.
@@lizzyrank5405 its the difference of a cake being chocolate and a cake using chocolate
Oh my god I was so excited that you got the history right and explained the reaction so well!!
