2:42:16 I think this card is used like this: Normally you can build and/or destroy a total of 3 buildings with this action. If you use that worker card, you can use 2 of those actions to upgrade an existing building, which would usually only be possible by using the workshop. That way you can get an even better upgrade action (upgrade costing 2 subactions + 1 remaining build subaction) and your workshop is still free
You all are still playing generator hard mode :) For generator stress, you should only use the square black cubes dropped into the generator instead of the fancy resources. They have a better chance of sticking, permanently even once the upgrade is applied. On the weather phase food - you shouldn't gain a food for the one symbol on the card. So that one makes it slightly harder, but I think that generator issue is on net working against you. For expeditions, when you stop and return with an A or B card, you'd place that card underneath the next letter with the bottom being the first step for that next card. This makes a B card one more step overall to complete than an A card for example. So basically if you continue, keep the old card flipped up (black showing) under the next card. If you return, flip it back over as the starting space for the next expedition (but only the top card gets resolved upon completion). I've had worse rules issues I played with and learned better for my next play. The game just has a ton of things to keep track of, but it's so rewarding.

A few things to consider that have already been mentioned - Beacon building, don’t use upgraded coal for feeding generator, only 1 food per symbol etc. BUT I think you also missed adding a hope marker when you built the child shelter. The top of the child shelter law card states +1 Hope.
28:00 You can build a beacon anytime, there is no requirements for buildings (only need ressources) except for special buildings that require a specific law to be called out. 39:35 You dont need the steamcore to build the beacon. Steamcore is only used to upgrade. The golden icon sets the rquired ressources for upgrade.
Have I missed this or did you forget one hope right in the beginning? Didn't the Child Shelter card show a +Hope effect? Other than that, I believe that one more house instead of the second gathering station would maybe have made a difference. But not much... This game is hard... And that's alright.

I am only about 40 minutes in, so maybe take the question with a grain of salt, but: What made you think you need the Workshop to build the Beacon? Wouldn't have changed your gameplay, I believe, but maybe I missed something.
