I don't do as much quick--or traditional--pickling as I should, probably because I can get good lacto-fermented cucumbers, sauerkraut, and tomatoes from my local Polish grocery. But this pickled onion recipe is so easy and cheap, that it's worth trying. Thanks for posting 🙂

I like doing fridge pickles like this. Fresh hot peppers out of our garden into a brine with garlic, celery seed, mustard seed and peppercorns

The same can be done with white onions and when ready add in the jar a piece of read cabbage or any other red vegetable too.
