Why is Cannone hard to hit? I mean this is obviously a highlight reel and he isnt miles ahead, but it seems like times when he should be hit he isnt? Is it his mechanics or positioning or what? Why do opponents fail to connect with him when it seems they should've?

If you're thinking about the duck hits, then cannone is hard to hit because he's already small and is even further shrinking down his target area. For bida, that means when he goes high line at the start of the action, he has to basically shift his point to go to the thigh. Unsurprisingly, bida misses.
He's also a French fencer which means his stop hit is about getting your arm as far out as front of you whilst moving back and keeping your body neutral. This is in comparison to the Italians who will move their body towards the point, making it potentially easier for both them and their opponent to score. With cannone using a pommel that makes it very difficult to hit him without getting hit yourself. Bida hasn't got super long arms so cannone is probably outranging him on arm length as well (or at least equalising it).
Lastly, when cannone scores, notice how he is always disrupting where Bida thinks cannone is going to be. The duck hit is a clear example of this vertically. But there are times when cannone will attack and literally rush in to corps à corps - which is how he gets that red card. His duck hits are occasionally with a step in too, so Bida has even less time react - literally stepping under bida's blade. Essentially, Bida can't just stick his arm out and score, he has to plan for where cannone will be. And then pray he chose correctly.

I feel like more and more fencers are adapting this type of disruptive movement, especially the shorter ones.
Basically you bounce in and out of distance at a very fast paste with very convincing feint and beat whilst keeping balance. This will make the opponent hesitant about closing the distance. Combined with a very strong and fast set of direct attack it would force the opponent to be reactionary even when they’re the ones pushing. By conditioning them to erratical and sudden moves, the opponent is incentivized to take it slower and twitchier approach which is where the beauty of the style comes in.
Athletes are trained to go for opportunities, so you give them one. Either by stepping a bit too close or dropping your hand too much. But you are prepared, and your opponent is attacking in a way they’re not comfortable with. Together with the slow march it often results in the attacker going for a direct attack in a very predictable line and at a bad distance. You can choose what to do next, in this case it’s not that hard to pull your shoulder/ chest out of the way to dodge the hit if it’s the only part your opponent could hope to hit.
The solution is actually to kinda just ignore this mess and go for long attacks, some Italien guy did it to Cannone after getting demolished and got like 5 points by just running with his blade at front, not even a full flèche.
