    Finally a step by step recipe for macaroons. I have wanted to make these forever but was hesitant because the recipe's dont give you all the little tips like leaving them on the counter to dry before baking and letting them sit in the fridge a day before eating for better flavor. I had no idea what aged egg whites were so thank you very much Stephanie for all the tips. I cant wait to try making them. ❤

    I made these and they are absolutely divine. I doubled the recipe to make a lot. Letting them age (both the egg whites and finished product) makes a huge difference.

    Thank you so much for your your recipe. I've been trying to master these for over a year. I've tried almost everything. I even bought a book. I did your steps and omgoodness. I'm so excited. They came out perfect, beautiful and delicious. Just the way they should look and taste. I came out with exactly 30 macarons and with just enough filling. You really are awesome. Thank you again. Can't wait to make these more often and try different colors and flavors. The strawberry cheese macarons were a big hit 🥰

    I watched this video over and over because I really wanted to try it out. I have done quite a few of your recipes and as long as I follow them to the tee, I have been successful with them. This recipe I did it the first time and I flopped! Too much humidity and I believe i over mixed. That was yesterday, but today I had to try again and omg, I have made the best looking and tasting macaroons ever thanks to you!! Thank you for your videos!!! 🥰

    Hi Stephanie. Thank you so much for this recipe and all others recipes. You are amazing! I been reading books, searching on all the web pages on the internet, buying books, and also buying down loads etc of baking specially the macaroons, and guess what I ended baking with you in You tube, these macaron I been baking for years and sometimes didn’t work sometimes came out beautiful! I make your recipe and there are beautiful and actually I am write this comment because my face is same s yours so HaPPy.
    Thanks again let me know when you write a book with nice pictures to follow direcciones, es important not only read a book also look at the pictures.

    Wonderfull, Now I know what to do more with my dried strawberries and raspberries.
    The humidity is very high now in Holland 80% and my experience is that macarons succeed better with lower values.
    But I will definatly try your recipe. Thanks for the effort and greetings from Holland 👍👍👍
    TIP: If you have troubles with the drying process, you can set your oven on 50degrees celsius and let the door open when you put a bakingsheet in it.
    Pull them out when they are dry.
    It can go fast, keep testing.

    Stephanie, macarons are definitely my favorites to bake!
    They are difficult but the feeling that you get when they come out the oven is wonderful!
    I always use the italian method. I just one got them right with the french meringue.
    You always inspire me to try this method again. They look gorgeous! and the filling must be delicious!
    I'm going to try them very soon.
    May be some day you can try a big macaron! Such a challenge, isn't it?

      Yes, I agree, macarons are fun to bake. And someday I want to try making larger macarons like you see in the French bakeries.

    Love the recipe. Ive tried to make the french macaroons many times and they never turn out. I will try again one day though.

    I wish I liked meringue so I could make these for my neighbor who has cancer. My arthritis is in charge these days, so if I can't eat it, it's not going to happen.
    You teach me so much. LOVE strawberries, but never heard of dried. Love watching all you make.

    I have been smitten with macarons lately. I really would like you to demonstrate the Swiss and Italian Macarons someday. I attribute my baking passion to your wonderful bake tutorials.

      I can find several other tutorials on italian, but very few on Swiss... is there a reason for this? Do they not develop the correct consistency/texture? Swiss meringue is my favorite, because it's easier than italian but more sturdy than french... seems like this would be the obvious choice, and yet I rarely see it... so there must be a reason, right?

    Thanks, Stephanie for a lovely cookie recipe. They look simply scrumptious! I was wondering about the people who are unable to obtain freeze dried strawberries, whether strawberry extract might be a good substitute, if they can find that. I found several listed online that were highly recommended. They would need to add some food coloring, too, I would imagine.

    I like this style of macarons! I can't get the shiny top, smooth but not as shiny.
    I live in the tropical/rainforest and our lower humidity days is about 70% which I found to be pretty dry. I mean my lips start cracking at 70% and below 😂 But just a FYI for those that wonders if their humidity is too high. You will not be able to dry mac at relative humidity above 75% at room temperature. In those cases you need either dehumidifier or AC.

    pps you can find freeze dried banana strawberry chips at the 99 c only stores they might be on the end isle or on one of those hanging tab things near the chips so have a look there

      You want only the bottom element turned on.

    Hello once again, i tried making the macarons they turned out good. The only query is the shell changes lot color to brown on the edge. I read you saying they do turn brown but how can we control that? I want them to look beautiful too. I even tried taking them out of the oven immediately after they started Browning .
    Second query is about the filling. I used the cream cheese feeling but the other day they turned soft. Many thanks for your reply on my earlier message. Really it helped me a lot .

    Hi Stephanie, thank you for Joy of Baking. Your blog and RUclips channel are my points of reference and I always have great results when I follow you recipes and tips. My oven is has a convection mode as well as standard mode. I often check the temperature on both modes to ensure it is properly calibrated and so far, it is. Should I bake these macarons on convection setting? I thank you in advance for any advice you can provide.

      Unfortunately for a classic macaron I don’t know of a substitute for the ground nuts.

      I like to use AmeriColor soft gel pastes. I used about 1/4 teaspoon to get the color you see in the photo.

      I used the fan when making the macarons. But you can bake them in a regular oven as well.

    Hi Stephanie, Is your mixer bowl glass or plastic? What brand of mixer is that? It much nicer than my stand mixer... And doesn’t look as heavy as mine! ☺️

      My bowl is made of glass. I use the optional glass bowel for the videos so you can see in but it’s not necessary. Metal is fine. My mixer is a Kenwood Chef Titanium.

      If they are flat and didn't have feet, it could be an under beaten or maybe broken meringue. Or it could be that the oven temperature needed to be a little higher.

      You could just leave out the freeze dried strawberries and have a cream cheese filling.
