This looks great, not sure what eel tastes like, hearing about all the bones put me off as I hate finding bones in my fish. I would much rather have decorative sushi for my birthday than cake, frankly I love even normal sushi.
The bones are so miniscule they literally just feel like nothing. You don't even have to spit them out! It's extremely delicious. I recommend you try it out!

I have to say this is the best video so far, everything is well planned, organized and simple or follow. You must had lot of training with the knife, you handle it perfectly. Most chef can't do what you doing there. Awesome!

Amazing love the nori strips to hold the eel on the rice.I love the creativity with the shrimp and octopus.I place masago on top of the eel just a small ball on each piece.I Use green onion cut at an angle and sriracha for eyes.You have to try my recipe it is garlic soy mayo.Which is amazing and takes very little soy sauce.I really love the design of dragon roll. The variety I'm finding in my American supermarket is covered with some kind of deep fried crunchy stuff and it's delicious.
