    One thing I can say about Texas is they do things right when it comes to meat and barbecue

      ​@RLKmedic0315 well that's why here in Texas baby, beef IS KING (brisket/dino ribs/ steaks) no need for bbq sauce. Other meats, anyone can take as & be proud of. But I will agree..pork is not our greatest master.

    Millie....a lot of restaurants make mashed potatoes with little chunks of potato. Many have skin in theirs too....or garlic.....so many options.

    There is another secret to eating juicer steaks and that is to allow them to rest after cooking. If you immediately slice it all the juices come flowing out. Give the outer crust 5-10 mins to set and keep all that juice inside and you'll be golden.

      Perfect advice for grilling or sear to oven cooking. A reverse-sear requires no rest time if cooked properly.

    mashed potatoes arent always made in a "whipped" state in the US, many like them not completely mashed but "chunky"

      I used to work at a restaurant many years ago that kept the prep cook busy. We could always tell his mood by the mashed potatoes. Light, fluffy potatoes = happy cook. When he was upset or peeved, the lumps had lumps.

      OMG - well done --- THE HORROR!!
      medium rare tastes entirely different from a rare steak --- so it is your choice ....
      HOWEVER ......
      my favorite description is to just let the ribeye!! steak walk across the coals --- warmed thru but definitely rare ----some think it is not as good as medium rare where there is a lot of marbling. However, on a hot grill you get graded rareness working from edge to middle ... best of all worlds ..... ahhh

    I worked at a steak chop house for a year back in the day. When somebody would ask for it to be well done, I'd go in the kitchen and have the chef offer up an end piece well done and one medium rare. It's amazing how many changed their mind. I can't remember one single person saying they'll stay with well done. Nice vid guys - happy you both enjoyed yourselves.

      @@wal6377 Yeah, that is the sweet spot. Medium would probably be even better, but cooks don't all cook the same and you will get some too rare. To avoid the hassel, I order medium well too.

      There's a couple of reasons they cook "differently", but it all amounts to fhe same thing.
      They don't want to spend that much time cooking each food item. The more time they spend cooking each item, slows them down, and if the restaurant is in full swing, people wont be happy they need to wait that long for dinner
      They feel they know better. This is pure arrogance (not to say the customer service aspect of what the OP tried was bad, and I DO applaud their initiative).
      They are afraid the customer won't like the meat cooked THAT well done, and will ask for a new steak cooked less anyways.
      My step father would have been someone that would have had his food sent back until they made it WELL DONE. He hated it "red" in any way, shape, or form. He would order food "burned" instead of well done.
      There are some people who think that asking for well done ruins a steak.

    I live in Dallas, and I go to Terry Blacks every couple of months. Love those guys. Always so great to meet out of towners there at the bar. Makes a Texan feel proud.

    Whatever surface you cook on, make sure that it is screaming hot before putting the meat on it. That is the easiest way to keep your meat juicy.

    Best BBQ in Texas is found at road side stands and small hole in the wall family owned restaurant and not chain shops.

    The secret to a good steak is to put a nice crust on the outside so it holds all the juices in followed by letting it rest before cutting so those juices thicken up a little and stay inside. You guys had a nice steak.

    For juicy steak: Salt a healthy amount or marinade the steak and refrigerate at least an hour before cooking. (Keeps moisture in the meat, since water will go where the salt is.) Bake at 350 F for about 10-15 minutes, then remove and sear over very high heat in a little oil for 30-60 seconds or so on each side for a good crust. (Reverse sear method) Should be warm and red-to-pink in the center.

    Silky-smooth potatoes is more like what we would call puréed potatoes or potato purée. Mashed has bits that are still firm, especially in the South. Purée is more of a northern food for sure.

    I am really glad you guys enjoyed your trip to our great country.
    If you come again, drive through the smaller towns in a state.
    Unless I was in a mega hurry, I always traveled the older highways and backroads. The ones that people traveled before the interstate system.
    There's soooo soooo many awesome smaller restaurants and diners in smaller towns. Not to mention wonderful shops with unique items. Especially in the fall you will find loads of festivals and markets.
    The big cities really only offer big buildings and big crowds with big traffic lol.
    There is so very much more to see and do. Not to mention that all the channels all rush to do the exact same thing. Be brave, be rebels and take the initiative to do something different.

    Sometimes mashed potatoes are lumpy on purpose. That means they mashed the potatoes by hand with a masher rather than an electric mixer, which makes it fluffy.

    Just to be clear, Terry Black's and Texas are not the only places in the U.S. that you can get good steak or good brisket. I've sampled neither in Texas but I've had some pretty good samples of each on the East coast.

      I'm 58, worked at American Airlines and gotten to travel from coast to coast, overseas and North to South to both borders. I grew up eating BBQ.
      The best BBQ I've ever had was at Terry Blacks.

    You guys realize, you have probably lost the sponsorship from the UK food & beverage industry . . . Right? LOL!! The menu will probably give you a hint as to what is on the wings. Pan fried steak is the absolute right way to to do some steak. Special ovens at very high temperature is another. A broiler is just an upside down grill. Some steak do better roasted.

    Go to Ruth's Chris. Get the Filet medium Rare. It's not cheap. If you have one you will understand why. Do NOT ruin it by cooking more than medium rare.

    Sear the aged meat fast on a very very hot grill or oven. Then cook the steaks or sausage in the oven if you like to medium rare and then let the steak rest away from heat for 3 or 4 minutes. So, sear, super super hot grill, cook less time than you think is needed and then let it rest.
    The cuts of meat I’ve had in the U.K. have been sub-par compared to the U.S., unless you can get Argentine beef. Look for dry aged beef if you can, and thicker cuts. If needed, look into sous vide for your steaks. You’ll sear them on both sides and then seal them in a sous vide bag. You’ll then throw the sealed seared steaks into a very hot, circulating water bath. This method will always keep your meats juicy. It might be worth looking into getting a simple sous vide circulator and use it with a very large stock pot for any kind of meat, veggies, even eggs! Just thought.

    Mashed potatoes may contain bits of potato, 'lumps'. Whipped potatoes are smooth. We, in the states, use 'mashed' interchangeably between the two. Welcome to America.

    I used to go to a bar that had 25 cent wings on certain days. You get get a full meal of them for like $2. I haven't been there since before covid so I'm not sure if they still do it.

    Please come to Fort Worth and go to a place called Goldee's BBQ. It is the number one rated barbecue restaurant in the state of Texas according to Texas monthly magazine. Also the stockyards is a historical masterpiece that has been used for movies and television shows. Mr. H and family went there.

    Ribeye is my absolute favorite cut of steak, the fat marbling makes it melt like butter in your mouth. And Brits going to Terry Black's is almost a meme at this point. Show us something we haven't seen before. Ask the locals what their favorite place is.

    American beef tastes better because it is grain finished before slaughter. In the UK they are grass finished.

    The fact that you call a grill a barbecue, that’s where the mixup in what you consider barbecue in the UK. At least that’s what I think. What we consider barbecue isn’t an object, it’s the method in cooking barbecued meats. Low and slow, over indirect heat is how barbecue is done. You can use a grill to do it but you have to be very careful and not use it the same way you would if you’re were making hamburgers and hotdogs.

    I love that he takes healthy real man bites of steak. Brisket isn’t my favorite either without some real spicy bbq sauce.

    The othe rmistake i find people make with their steaks is not letting it rest and the juices re-distribute back into the meat itself, so they cut into it too early and all the juices spill out and you once again get a dry steak

    As a Texan, it seems that all these Brits coming here to critique our food is really getting out of hand. You've got these two, and the "Jolly" guys, plus Ollie Pettigrew, and God knows who else is out there sampling Texas cuisine. Can we just state that nothing beats Texas Bar-Be-Que? We don't need everybody coming over here to tell us how great a well-cooked brisket is.

    couple of tips for 'juicy' meats... get it as fresh as possible (just butchered and cut). the longer you let meat sit before cooking it, the dryer it will be. as days pass, the juice leaves it.
    don't freeze the meat. freezing the meat draws out the moisture from the meat so that when you thaw it, it has less moisture then when it was frozen... and again, the longer you let it sit in the freezer the dryer it will be.
    don't over cook the meat. cooking evaporates the moisture from the meat, so the longer it cooks, the dryer it will be. a quick pan sear on the surfaces and an appropriate amount of time in an oven to cook the insides is all that's needed. just get the insides up to right at the right temp (with a thermometer) and take it out quickly and let it sit for a few mins before serving to finish cooking... no need to keep it cooking for an hour (exaggeration).

    Howdy from the Texas Panhandle. When I want a cheap piece of meat. i smoke a Brisket, If I want a good piece of meat I grill a steak.
