Yo, if you inset the bottom face instead of that grid fill you can have bigger space for the bevel afterwards, just fyi, no need to grid fill first. Fill the hole with the Ngon, inset, grid fill the inside Ngon. Than just bevel/ support loops manually

What do you do if you need to cut very smooth and organic shapes into an oval-like sphere? This is extremely useful for general hard surface stuff but damn not using booleans for organic stuff feels impossible

In first case you should do bevel with one segment and then add weighten normals modifier, and result will be same, and way less poligons.
