- Sabudana curd rice is a delightful and refreshing dish that combines the chewy texture of sabudana (tapioca pearls) with the creaminess of yogurt, perfect for a light meal or a snack.

Ingredients Quantity
Oil 1 tbsp
Asafoetida 1 tsp
Bengal gram 1 tsp
Black skinned split gram 1 tsp
Peanuts 1 tbsp
Ginger chopped 1 tbsp
Dry red chilli 4-5 no
Cumin seeds 1 tsp
Curry leaves 30 no
Green chilli chopped 4 no
Tapioca pearl soaked 1 cup
Basmati rice boiled 1 cup
Salt to taste
Milk ¼ cup
Curd 250 gm
Salt to taste
Fresh coriander chopped 1 tbsp
Coriander chopped for garnish
Method :-
1. Place kadai on medium flame and heat oil. Add asafoetida, Bengal gram, black skinned split gram, peanuts and chopped ginger sauté well.
2. Add dry red chilli and cumin seeds. Sauté until the gram turn golden brown.
3. Add curry leaves and let them splutter.
4. Now add chopped green chilli and soaked sabudana mix well.
5. Stirring occasionally, closed the lid and Cook on medium-low heat, until the sabudana turn translucent.
6. Take a mixing bowl add boiled rice and mashed them with the help of ladle. Now add salt and mix well.
7. Pour the tempering over the sabudana in bowl and mix well.
8. Allow the cooked sabudana to cool slightly.
9. Once cooled, add a little milk to get the desired consistency.
10. Take a bowl of curd, whisk the curd until smooth and add in a bowl mix well.
11. Add salt to adjust the taste and mix well.
12. Now add chopped fresh coriander and mix well.
13. Side out the serving bowl and garnish with freshly chopped coriander leaves.
14. Enjoy your sabudana curd rice as a refreshing and light meal!
