Prep time: 10-15 minutes (excluding soaking time)
Cooking time: 15-20 minuets
Serves: 4-5 people
Ingredients:
RICE | चावल 1 CUP (SONA MASURI)
WATER | पानी 3 CUPS
MILK | दूध 1.5 CUPS (ADDED GRADUALLY)
CURD | दही 1.5 CUPS
SALT | नमक TO TASTE
GHEE | घी 2 TBSP
CHANA DAL | चना दाल 1 TSP
URAD DAL | उरद दाल 1 TSP
MUSTARD SEEDS | राई 1 TSP
GINGER | अदरक 1 TSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2 NOS.
RED CHILLI | लाल मिर्च 2-3 NOS.
CURRY LEAVES | कड़ी पत्ता 8-10 NOS.
ASAFOETIDA | हींग 1/2 TSP
FRESH CORIANDER | हरा धनिया A SMALL HANDFUL (CHOPPED)
Method:
Add the raw rice into a bowl & wash 2-3 times using fresh water, then pour plenty of water into the bowl & let the rice soak for 15-20 minutes.
Once soaked, discard the water & add the rice into a pressure cooker, add water & pressure cook the rice over medium high flame for 4-5 whistles.
Switch off the flame & let the cooker de-pressurize naturally, then open the lid & stir while mashing the rice, once mashed let it rest & come down to room temperature or until it’s only lukewarm.
Further add the milk gradually & keep stirring, once all the milk gets incorporated add the whisked curd, salt & mix again.
For the tempering, set a pan over high heat & once it gets hot add in the ghee & let it get hot.
Once the ghee heats up, lower the flame add urad & chana dal, stir & cook until the dals turn light golden brown.
Then add mustard seeds along with the chopped ginger, give it a quick stir & then add green chilli, red chilli, curry leaves & asafoetida, stir & cook for a minute then add the tadka into the curd rice & mix well.
Lastly add chopped fresh coriander & mix.
Your delicious curd rice is ready, garnish it with some pomegranate & serve some pickle along with it.

As a Telugu girl, I can say that the comfort n soothing feeling that daddojanam gives is like bliss..☺️ Having it with Dosaavakaya (yellow cucumber pickle) or Mango pickle or Lemon pickle takes the feeling to next level. This recipe u have shown is of South-Indian hotels. In the authentic South-Indian temple prasadam, green chillies n pomegrenate are not used. Instead crushed pepper is put n it tastes divine😌 Also eating curd rice on a banana leaf is undescribable👌
Dadhyodanam is the original name 😊 (dhadhi - curd or Perugu. Odanam - rice or Annam)

Your pronunciation is bang on for someone who has probably never spoken Tamil in his life. It is “Mor Milagaai”, where the Mor is pronounced like the Hindi word for peacock. Also, I cook the tadka in coconut oil, love it that way. ❤️ curd rice tastes amazing with crispy aalu fry.

Curd rice is a must-have in our weekly menu. It's our go-to when we're feeling a bit sluggish or need something easy on the stomach. But Ayurveda says Adding salt to Milk is harmful, then how does Curd Rice become good for health?
Iss mein Dhoodh ka quantity kam hai Aur curd ka quantity jyada hai so little bit salt is not harmful.

u can make curd rice with only curd as well without milk. It will be tasty too . There are different options for food recipes to make it healthy. Just don't forget that.
Btw Ayurveda also says u should not eat fish and curd together, but aren't there people who eat it together😂😂. There are fish curries which add curd to it.
Would adding toasted cashew bits add a bit of crunch & add to the taste of the curd rice ?

Superb, Chef.. My mom makes curd rice for travel or for later use this way.
She mashes the rice when its hot, and adds hot milk, mixes and leaves for a couple of minutes. The rice thickens. Then she adds hot milk again , as much milk to make the rice sort of semi solid. Then let's it cool. Then she adds a tbsp of curd , salt and tadka of mustard seeds, finely minced ginger, Hong and curry leaves. This doesn't become sour easily. Can be used even after 2 days- just add milk or water and mix when serving. Helpful during hot summer for packed lunches.
