Excellent grammatical explanations. I knew all that but never thought about the details as you explained. After a while you get to a point where you just instinctively know when something sounds right or not without thinking about why or why not.
Note that in English, you can also phrase 'seeing is believing' as 'to see is to believe'. English has lost a lot of uses for the infinitive that many other related languages still have, in both the Germanic and Romance languages, resulting in the overuse of the gerund. English is often the odd one out, although that's true for every languages at various points.

Simple rule: infinitives are generally used as nouns, so use them where you'd use words like algo/esto/...
* esto/nadar es divertido
* esto/{leer historia} es interesante
* antes de esto/levantase
* no (está permitido) esto/comer -> no comer
* quiero esto/{ir al gimnasio}
* me gusta esto/{leer cómics}
* pensar en algo/esto/{ir de compras}
* sin esto/pensar

For the most part yes, although sometime "in place of" is a better option. An example would be asking a waiter to subsitute something on the menu for something else(en lugar de).

Thanks for the lesson. Off topic but I was wondering about me rolling the "r" at the end of an infinitive. I hear so many native speakers not rolling it that I keep thinking maybe I am over-rolling it or should I even be doing it at all . But perhaps it is regional? I think I hear more Spaniards doing heavy rolling. Or perhaps it just depends on if they feeling lazy and speaking more casual?
