I know brother,traditionally soya sauce is not used is kalabhuna bt many restaurants use it and if you do some research you can find many recipes with soya sauce … soya sauce is used to get the color early …thats why now a days restaurant owners use it..and there is another resone is usually red meat is used to cook kala bhuna and that kind of meats need more time to cook then duck or chicken, but chicken or duck if you cook for long it will loss shape and bones will be separate that is why i use soya sauce to get the color early …if you want you can skip
