GRILLED JERK CHICKEN & BBQ RIBS (Gas Grill)

  • Hey foodies! Authentic Jerk Chicken is done over pimento wood. This is an easy way to enjoy some of that delicious Jerk flavour at home using your gas grill. If you're able to set temperature on your grill, aim for 350F.
    There are many ways to grill the chicken/ribs:
    1.Low and slow heat then high heat for colour
    2. Medium heat throughout entire cooking till colour and doness is achieved
    3. Medium to high heat to seal in juices then low slow heat to finish the cooking
    4. Low and slow smoke
    There are countless ways! This is just one of them. Hope you enjoy the video.
    INGREDIENTS:
    ---------------------------------------------
    GRILLED JERK CHICKEN ⬇️
    ---------------------------------------------
    4 Leg quarters with skin on, cleaned and rinsed with vinegar and cool water
    1/2 tsp or more Browning for colour
    2 tbsps or more Wet Jerk Seasoning (I used mild for my son's sake 😁)
    1/2 tbsp minced Fresh thyme leaves
    Chicken or dry Jerk seasoning as desired
    Black pepper to taste
    6 allspice berries crushed
    Basting the chicken:
    Red Stripe Beer or Chicken Broth during cooking
    Jamaica Valley Sweet Pimento Ketchup for the last 10 - 15 minutes of cooking

    BBQ RIBS⬇️
    --------------------
    2 lb. Back ribs, silverskin removed and pat dried
    Yellow or Honey Mustard
    Barbecue sauce
    BBQ Seasoning/Rub:
    About 2 tsp salt
    1/4 tsp cinnamon
    1 tsp Chili powder
    2 tsp onion powder
    1 tbsp garlic powder
    1/2 - 1 tsp freshly ground black pepper
    1/8 tsp cayenne pepper
    1 1/2 tsp. Paprika
    1 1/2 tsp Cumin
    1/8 tsp ground allspice
    1/4 cup brown sugar
    Basting the ribs:
    Barbecue sauce as desired, for basting for the last 15 - 20 minutes

    I love my charcoal though.
    Fire bun the gas grill too. Haha!
    I do 3/4 of the grill coal, so I have my hot and not so hot side to rotate the meat.
