    this is a good alternative never thought of pork butt as pork belly substitute I like this idea I might have to try it love pork! btw the mods in my MB1050 working very well I smoked a 15 ib. full packer prime brisket 12 hours 225 came out perfect was most tender brisket I ever had!The fireboard 2 works so well I love it!

    I’m looking at those MB grills. I may just have to look into getting me the 1050.
    Those burnt ends look delicious! Can’t beat pork belly. I used chuck roast for mine one time and they turned out pretty good but not as good as pork belly.
    And that cosmos is really good stuff...I’ve used it before!

      @@TXSHeat seen a biscuit test MB on grate is hot in middle and cool on the edges (built in temp gage is off here but not by much)
      Shelf 1 and 2 are lower like you seen by 50 but almost even across

    I'm a Traeger pellet grill owner (going on 6 years) and I'm really interested in the 1050. Where is the internal temperature probe of the 1050 compared to the one on the lid and to the one you were using (I think you said Fireboard).
    I do have a request but it's OK if you don't want to do it. I don't know where in Texas you live (I live in North Richland Hills) but I have made Papa Murphy's Take N Bake Pizza's before on my Traeger and they come out pretty good (I do have to rotate it because of hot spots) but it doesn't get as much as a "wood oven" taste as I would hope. I'd like to see you make bake one of those on there (or even your own). Thanks for making the videos.

      all my "official" testing was done with a empty grill with factory and 3rd party thermometers. Agree the drip pan will have an impact on temps.

    I have a 560. I’ve seen on the users groups that having a drip pan on the lower grill too far to the left can throw off the probe’s temp accuracy. Maybe that’s what happened?

      All the test, MB has not confirmed, point to some sort of calibration of the probe with a specific location int he grill. Meaning if at the factory probe location reads at 200 but the center is of the grill is actually 250 then the probe/software has been calibrated to the 250. Just my thoughts.

    I've just got a masterbuilt and I have the same issue r.e. temps. Is it best just to set the grill for whatever above it takes to get another probe reading the correct temp?

    Kosmos is good stuff. But on my pork belly burnt ends I use robert Rothschild raspberry chipotle sauce. Fantastic stuff!

    Let us know if you figured out the temp difference and a fix?? I'm guessing the same thermostat configured still for the 560, but the 1050 is a lot bigger so the temp is that much off?? Just a guess.

      I have a trouble ticket into MB right now. They are only taking online request. I hope they can do a firmware update that will allow us to change the temp. I am running a new test with the Fireboard as well.

    Do you think that the probe is bad or could it be reading correctly considering its location. I have that issue with my pellet smoker. Its mounted on the far right so it reads about 30 degrees off of the right side of my grill.

    I belong to a FACEBOOK group "Masterbuilt Series Fan". There is a post that states that the drip pan is your problem, it inhibits proper air flow, makes a huge difference.

      Dave - I am a member too. I have a video coming. The issue is not the drip pan nor the location of the factory thermometer but rather the actual thermometer and/or the software. Thanks for the reply! Watch for the video coming soon.

      Only thing it can be is in the calibration. MB has been very slow in responding. I have dumped the original controller for a Fireboard and couldn't be happier!

    Nice video brother. I love pork belly burnt ends. I need to try some of these Kosmo products. On a side note, I've seen these temp differences on a lot of videos for these smokers. Masterbuilt needs to upgrade them to one of the PID type controllers. If they do that, as good as these smokers seem to be now, they will go to the next level. Looking forward to your next video.
