    If it's windy too much air comes in the back vent. I closed mine off except for an inch on either side. It works 100 percent better...temp is constant inside now

    I don't understand not blaming masterbuilt? I mean why give them a pass if that portion of the grill isn't working correctly? So people new to grilling might not know that this is an issue and their food is taking longer to cook or cooking way to fast. That portion of the grill is just as important as the build quality itself. Good video,however, for letting others know of the problem. Hopefully people search this grill and get these reviews from people like you and others :). Still getting the grill but I am wondering about some of the flaws that people are bringing up about this grill. However seems like fixes you and others have figured out on this grill which will help others and me.

    I have a 560. I placed a Maverick probe near the center, on bottom and middle grates. I found that after about 20 minutes, the bottom grate showed within 5 degrees of MB set temp. The middle grate showed within 10 degrees of set. I think it took 20 minutes for the entire cook chamber to heat up and help regulate temps. I'm pleased with those readings and couldn't ask for anything better, however I'm having other issues with the MB controller, but temps aren't one of them. Hope this information is useful, in some way.

      Some of the issues may be resolved through updates - MB doesn't provide any info on what is included in the software updates. Sadly I haven't used the OEM controller much past this the point this were this video was made due to other issues around reliability

    Just saw you video, great stuff. I have a GMG and a 1050 with similar issues with temp inconsistencies in both. GMG has an adjustment on their app to try to correct this problem but it is a pain to adjust for every cook and doesn't necessarily work well. For me,, these things are part of the "art of BBQ". It never has been a 'set it and forget it' sort of thing. Although paying a lot a grill and still have to put out more for mods and better temp controllers is frustrating.

    I’m not denying that the Fireboard is probably more accurate than the stock controller, but here is just a thought. I know that RECTEC pellet grills use the same controllers for various models and set a calibration offset on their RTD to reflect what the temperature is in the middle of that particular grill, and not the probe site. So if you set the grill to 250 deg, the center is close to 250, not the location of the probe. It is possible that the Masterbuilt controller as they use the same one on both sizes, set it to the center of the 560 and 1050 respectively, and so the test results would reflect an offset for whichever grill you use. This could be proven if you repeat the same test with your other Masterbuilt grill, and get different results.

      Matthew Bragg - I should provide an update. I have tested in multiple positions to include next too and all around on both grills to see if I could find the sweet spot of the MB calibration and not a single time on either grill could I get it sync. I like the way you think! All signs point towards the calibration in the controller. The probes all seem to work properly.

    I wonder since the MB internal probe is under the grates (and presumably hotter) the PID controller makes an adjustment by showing a lower temp. It probably starts making the adjustment as it gets hotter hence why the ice test shows the same. Just a thought.

      Sounds like a cool “hack”, but shouldn’t be necessary because you paid for a Masterbuilt controller, it should just function well

    What all do you have to cook with out there on the patio? I saw several grills in the background of the burnt ends video. Just curious. Love the setup and the videos I’ve seen so far

    Did the fireboard even out the temps across the grill? The difference between the left (where probe is) and right side (next to hopper) are up to 75 degrees apart. Looking at fireboard but only if it levels the grill temp better. Thx for the videos

    Great Video Matt! We could also test these K type thermocouples/temp probes at the boiling point of water! Water boils at 212F and right in the temp range we use for smoking meats! Your Flame boss probes software could be off at higher heat temps or it could be masterbuilts software. Check with boiling a pan of water, as it comes to boil it should be right around 212 at sea level (It varies with altitude so check your cities altitude its 209 F at 1500ft and 206 F at 300ft ). My guess is these that have the yellow plug are very accurate! Those are actual "K" type thermocouples. Probes that don't have the yellow 2 blade plug are dependent on who set their software. Like the 1/8" headphone jack plugs, I would suspect those temps are probably off . This is why a good ANALOG gauge always works and never needs power and the better ones are recalibratable. (Like the Tel-tru)

    Temp swings don’t matter while smoking…ideal smoking temps are between 250-300 so unless it has a temp swing of 70 degrees and up you have nothing to worry about in any smoker/grill….ovens work the same way, they have temp swings too it’s just that the indicator doesn’t fluctuate like in smokers so they always seem to have the same temp that you set it at but in reality they don’t…

      Couldn't agree with you more! But the point isn't about swings its about inconsistent reading. As an example set it at 250 and it reads 175 or the flip. You can't cook like this.

      Bud great question! No/Yes - the video did not have the updated firmware however the same test was performed (off camera) when the firmware released. After that point the FireBoard found a permanent home with the 1050.

    My 1050 is the same so I know how much to offset the Masterbuilt controler to compensate for the issue. I use a Thermoworks system to monitor the temp and it works great.

    Maybe check all the probes in boiling water like you did in ice water. This is up there with the Camp Chef Woodwind WiFi and the new Cuisinart Woodcreek that I will choose from for my next cooker. I'm also awaiting Max Good's reviews of the GF 1050 and the Cuisinart.

    yeah I agree I have had my mb1050 for a week and the controller bugs out literally just shuts down and I had big temp dips with it as well, my solution,Fireboard, eliminates that big question is it accurate!!

    Did you try 2 ambient probes? Have you tested the ambient probes that mount to the sheet metal body? I am getting a 1050 and wondering how many and what kind of probes to run with the fire board.

      Yes, the Masterbuilt probe in the video was removed from the side for testing. I have tried a 2nd factory probe with same results. Currently i am using a FireBoard Controller and after market fan. I have a video on this as well.

      BBQ Beer Bros Two ambient probes seems like overkill since you are getting the same results? Where is you ambient probe location when you are cooking?

      @@timcrisman830 I only use one ambient probe for cooking. The video was done to validate that the MB probe is way off with no ability to adjust. My FireBoard ambient probe is hung from the 2nd shelf in the middle of the grill for normal cooking.
      Every smoker/grill will have temp variances throughout the grill however
      when you test two/three different ambient probes side by side they should all ready within an acceptable tolerance. 30-50F isn't acceptable

    Could it be that the controller is designed to regulate the set temp at the middle grate and not the bottom grate? I know many pellet smokers do that. They have the probe at the bottom but regulate set temp for somewhere in the middle from top to bottom. Just a thought. Maybe try the probes on the other grates.

      Great minds think alike. I have done a number of test all around the grill attempting to figure out if the calibration is based on certain area vs. actual ambient at the probe. The fact that both my 560 and 1050 have similar results I tend to believe the issue is based around probe/controller calibration itself. I have not been able to find a single spot where the factory probe and aftermarket probes sync in temp. Either case - know your temp and adjust according or drop a few extra dollars and go with proven controller. Thanks for the comments

    Ran a probe on my 1050 today, smoked a chicken for about three hours it held the temp at 250 or there abouts for the entire cook. Not much wind here today you looked like you were cooking by the sea.

    This is very interesting. Yesterday I smoked a 10 Lb Brisket in my Pellet Pro grill which has a PID controller. I noticed the same thing, it went to "A" temperature and maintained it; however, when I used my ThermoWorks Smoke wi-fi thermometer (which has proven to be very accurate) and checked the chamber temperature at the grate level I also found at least a 40-degree discrepancy. The controller showed a temperature of approximately 40 degrees lower than the TW smoke. I wanted 250, so I had to "dial-in" 210 in order to have a correct ACTUAL temperature of 250. It's aggravating, but I think it just means we have to get to know our grills and make whatever adjustments we need, but NOT blindly believe what the controller is telling us. The fact my controller can maintain the SAME temperature consistently is what matters to me. Just my.02

    why would you think its the thermometer? seems the ice bath was spot on but then the grill read high. any reason you didnt do a boiling water test taking your elevation into account?

      I have a 560 & 1050 and both have the same issue and after months of use I have found regardless of location of the factory probe vs a different system (FireBoard) the factory temp reads ~50F higher than any other probe. I don’t believe it is the actual prob but rather a calibration setting in the controller. I have not been able to find any sweet spot in the grill that syncs with factory. Yo add All test are done over extended times at temp not just quick test.

    I have the 560. I set my grill at 250. I put the ribs on the middle grate. After an hour I decided to put more temp probes on. I put one at bottom grate level and it matched the grill control. The one at middle grate read -50 degrees. I set temp until the middle grate was around 225. 275 on the grill control. Weird thing is, those ribs were done ( no wrap ) in 5 hrs. No way ribs are done in 5 hrs with no wrap at 225. I was using thermaworks as my other probes, which I trust. More experiments needed.

      So you are saying the MB probe was reading lower than the Thermaworks! For I am ditching the factory controller, until an update is released then I will do more test! Love my Thermaworks gear too!

    Hey man, is there a better quality grill that either has fireboard 2 drive installed or can be installed. I love the convenience idea of this grill but I'd be happy to pay more and have to do less mods

    MB needs to offer temp offset adjustments. In your case you should be able to use controller or app to add 50° to temp settings and presto, your grill is adjusted perfectly from then on. Plus you would be able to tweak it over your next few cooks to lock it in. Can that fireboard make temp adjustments up or down, if so thats the answer for me.
    Right now I am using Meater heat thermometers. It comes with 4 probes and gives ambient and meat temps for each one with individual cook adjustments. So it would not matter if a grill had hot or cold spots. Each probe reports and calculates cook time for each cut. That way your just using the MB controller as a throttle. If your interested in more detail. meater.com/ it would just be nice for MB to adjust its computer to closely match the hoods true temp gauge and I think everybody would be happy. They are such a new company I think we just need to keep an eye out for updates and upgrades. If not, maybe just wait a few years and buy the latest model with everything already installed...
    MB right now has a great start with a very good product and a whole bunch of beta testers. Let the testers add updates and stay current. Like that stainless steel fire box insert, I would want to add that during build up before first burn.

      Agree with you. Yes, FireBoard does have the ability to adjust + or - to calibrate each port/probe. Very nice feature. I have the meater block as well (original backer) and while I didn't show them in this test I did do a test with the Meater and the Meatstick side by side and they had very similar results.
      As you stated as long as you know how far off you can adjust the MB easily and run with it. Its not like you don't already do that on all the other cookers out there with probes far left of the fire or in the dome with multiple grate levels. You just need a good idea and move from there! Thank for the comments. We see eye to eye on this one.

      @@TXSHeat totally cool. Then I just want to jump back on that Meater. You did what I did. I saw the concept and said, if only it could work like that and I jumped in to try and make it so. I feel I have always been an early adopter. After what seemed like forever I got that first Meater. YES, it was all that and a bag of chips. I used it on everything. THEN like out of no where, they made it better. The charge box was a range extender plus they added 4 to the package and it became even more than I could have originally hoped for. I was going to give away the first probe, but as luck would of had it, my 4 pack was at our other home and the single was all I had. Rotisserie a chicken and 1 was going to be just fine. I turned on the app and Wow, it just got better, it added itself automatically to my other 4 probes and now I have 5 probes on one app. I have not brought all probes together yet to see if my single probe works off the 4 probe base yet to make all 5 work with the same range. 1st one as you know needed phone next to it, or one needed to have a ipad or something next to bbq to jump the range. So if the single probe flies like the 4 pack, wow again. Ribs steak, chicken can all go into the 1050 all at once and come out one by one as ready.... I will be the new pit boss on the block at parties with all that going on just like magic.. wait? What was the question,? Sorry got carried away. Being a first adopter is exhausting, need to take original Tesla Model X to the market and get a slab for cooking tomorrow..... 😜

    Did you try using the on board probe plug ins to see if it is the controller?? i am curious if main probe plus all the other ones are reading the same, that would definitly tell us if its the controller programming that is not working correctly.

      @@gigglefart2340 the four food probes are not ambient probes. I have not tested them in regards to food accuracy or as ambient. probes. Most food probes have a very limited range in high range before you damage them ~215F and with no information on MB sight regarding min/max levels I didn't want to damage them. I suspect they are fine and that the real issue is based on MB calibrating the probe in the software to a specific area in the grill. To bad I can't find that location and sync up. I have totally given up on the factory controller at this point. Fireboard for the win!

    Thanx for the info. on the temperature inconsistencies. I've been looking into pellet grills for a while now and was going to buy the Camp Chef Woodwind. I discovered the Masterbuilt through your channel and even with the temp issue, think i may go this direction instead.

    I would like to see a temp test in boiling water, its closer to actual used temps and just as dependable a reference. As part of my job I calibrate commercial cooking equipment at times. Its important to know where in the unit your calibrating and at when in the heat cycle. For a oven, you calibrate in the center of the space, even though the probe is next to oven wall. You don't really care what temp the probe reads, you want the thermostat to create a certain temp at the point your calibrating. Also calibration is usually a average of when the unit calls for more heat and when it turns off the call for heat. This can be a 8 to 50 degree gap depending on control and you shoot for the middle. So 350 may mean heat on at 335 and heat off at 360 and your within spec for that unit. With no food in same unit the heat may climb 10 or more degrees but that isn't part of normal calibration. If I was told that at 350 the unit could not exceed 350 by more then a few degrees you would see a call for heat at the 300 to 310 range.

      No need for the test. You are spot on the controller is "programmed" for general area of the grill. At least is my assumption based on a numerous testing. The challenge is where is that general areas? I haven't found a single spot that is withing 35F of the factory probe over an extended amount of time after allowing for the grill to settle in. Strange because FireBoard and FlameBoss both work register withing 5 degrees Left to Right. Simply put I believe the controller is of equal quality as the rest of this grill.

    With the factory control panel does the 1050 hold temps consistently like say a pellet grill would or does it fluctuate greatly id be adamant about buying one if I know I’m eventually going to need to shell out another $250 for a control panel that is going to work

    I'm Just sittin on the dock of the bay, Watching my time roll away.......I'm Just sitting on the dock of the bay, waiting on the China container ship to roll my way, The container ship of Masterbuilt grills is ruunnin late.... So I will just wait, wasting time, time away! Yea, the Masterbuilt uses a "K"Type thermocouple as its thermometer so Its definitely accurate. Their PID or its programming must be off. If my 1050 comes in and its PID is off, its not super expensive, to buy an off the shelf Chinese PID Controller. I built a box for my lead melting pot I use for reloading and its PID controller was $26.00 and uses the same K type thermocouple and it has a programmable temp in F or C and you can set almost any temp or curve you want.Any spread for fan cut in/ fan cut out is also programmable. It was made by "Arkbird" if that is a real name. Also if you want a really good analog USA made gauge get a Tel-Tru ,Rochester NY like the big boys use! If its good enough for Franklin BBQ Its good enough for me! A 3"is 46.00 on the Amazonian store. It is Not for the guys who are afraid to modify or drill holes! It is 1/2NPT which is National water pipe thread, so you have to use a 7/8-1" holesaw to install it, and it doesn't come with a nut. Those are only used in electrical work on conduit fittings because water pipe is tapered and really doesn't use nuts! However, somehow electricians do. Why they use water pipe threads on electrical fittings, and invent a weird skinny nut for it ? That is one of those things that makes my head hurt. Ha ha Go Figure that one out , I haven't.

    Can I use masterbuilts fan the fire board as the controller?

      Yes, you just need cable that is made up of a JST to 2.5mm Barrel connector cable. I made mine but i think you can find them premade on some sights thebbqhq comes to mind for one of them.

      Sorry, not following. All the temps check reported were with the factory built in removed from its original location and mounted on the left front grill grate along with the Flameboss and Fireboard probes at the same location.

    Had the same issue with the 560. the grill would say 250 but my thermosmoke would sat way higher even 75F higher!. also the main cooking area is way way hotter then the upper racks. Like 50-75F difference all the time.

    Great video, I am currently smoking ribs on my 1050, my thermostat on my 1050 is set at 275, my 3 reliable probes are all 3 reading 225, nut, and I have moved them around a few times, same readings on my probes. Sad scenario I paid over $800 with tax for my 1050, and their temperature setting is flawed by 50 degrees for a 225 degree setting. Plus, their app is a crap app... thanks

    Great analysis.. Has anyone looked at a mod using the Thermoworks Signal or Smoke X? it has a fan controller and i was thinking that it could be adapted to the 560/1050.

      I can't imagine why the Thermoworks couldn't be adapted or even the FlameBoss they just take different connectors. I have a Flameboss and have kicked around the idea but haven't had the time. Maybe in the near future.

      Long time user of the FlameBoss. I have been through their growing pains, not having app, service outages and multiple product revisions. With that the product has been great overall. FireBoard is new to my arsenal this year. I have V1 and now V2 (video coming soon). Just in the few months I would lean on the Fireboard v2 based on cost for value and overall functionality with an understanding you are getting A LOT features and ports for the money

      yea but this one didnt have hot spots, just cold spots. when theres no part of the grill thats above the set temp then theres no hot spots.

    Why not bash a grill if it does not give the correct temp. That is the whole point of these grills. If I am going to use a ad on device to know the real temp then I can use just about any grill with the ad on and save a lot of money.

      Great question? Easy Answer - MB could have easily calibrated for a certain, middle 2nd shelf, temp based on the location of the thermometer. I want MB to confirm this before I bash them on not having good equipment. Either case the controller/app leave little to be desired at the time I shot this video.

      I have done a ton of testing using two controllers and multiple gauges configurations. Wind or not the results should reflect the same with the lid closed. I just gave up on the factory controller all together as it turned out not just inaccurate but also unreliable.
      MB would be better of if they license from a 3rd party that is reliable. Thanks for watching! Great question/comment

      My cooks have been great! But I have run another prob and noticed the differences! Check yours and see what if its off. Hopefully mine is just out of touch!

    You have hot spots on most grills. I’m really not concerned with these results. Does it cook or does it not that is the question. I think you are making a mountain out of a molehill.

      I would tend to agree with you but the mountain is ~50 swag vs two other devices that are within a degree of each other all in the same spot. No moving not wind just, not food to direct internal airflow. It isn't an issue as much for me I have no long term plans to use the factory controller. Hopefully mine is the only one out there with this issue... but my 560 does the same so there that fact too.

    Thanks for this video. I'm on the fence about purchasing one of these gravity smokers for this exact reason. Masterbuilt needs to start using PID controllers on it's grills. PID controllers are quickly becoming the norm, and buyers have come to expect it. Nearly all the decent quality pellet grills Masterbuilt is competing with has them. The rubber gasket on the chute lid also need upgrading. People will pay extra for a quality product out the gate.

      John, I couldn't agree with you more here. Why are these guys trying to reinvent the wheel. Pay a licensing fee to a Thermaworks, Flameboss, Fireboard.. the list goes on and be done with it!

      Should be pretty simple to put together - JST connector for the fan and either 2.1mm or 2.5mm barrel for the Guru

    I have a Masterbuilt 1050 and all I can tell you is Masterbuilt should be incredibly embarrassed of them selves, the unit itself isn’t bad, but that control board is a piece of garbage! Mine broke on the second use, and now I see that master built is out of stock of almost all control panels, I’ll assume that this is because so many people have broken and they’re trying to buy new ones, I knew kind of what I was getting into before I bought it, so I’m not gonna be that upset, but it’s just embarrassing for a company to knowingly put out the garbage piece of electronic on a really nice smoker, it’s like putting on the cheapest tires. Possible on a brand new Lamborghini. It’s a joke! I’m going over to the fire board drive.

    These new grills should be able to maintain no more than 20 degree temp swings while running. All grills even your oven swings. That’s normal. But if you over 20-50. That’s unacceptable! Sounds like it needs a better controller.

      Mine keeps the temp within 2 degrees either way while smoking its the readout on the controller isnt accurate I.E. controller says 250 actual temp is 200. Doesnt matter to me as long as i know i have to set the controller at 300 to have an actual 250.

      @@MrMeJensen man, they should have just had something that connects directly to this wireless unit as well because it's useless with my phone. Makes some good food though.
