The point of the ending is that you don't know if the hypnotism worked. The look on his face at the end makes it seem like he remembers but it's up to the audience to decide whether he still knows or not. fun fact: Choi Min-sik is a devout buddhist and vegetarian. It took 8 takes of him eating a whole live octupus and he prayed before each one. That either shows how dedicated he is to his craft or how terrible a buddhist he is. Also, if you liked this then I HIGHLY recommend Park Chan-wook's JSA: Joint Security Area (as much as I love Oldboy I think JSA is the greatest Korean movie ever made, maybe the greatest movie ever made after Shawshank). Its acting (ignoring the Swiss characters) and story telling is just brilliant. We had to watch it during our Korean history class and when the end credits rolled and it said "Park Chan-wook" we all went "ooooooh that makes sense as to why it was so brilliant." And Kim Jee-woon's I Saw the Devil (Choi Min-sik plays a serial killer as the antagonist and JSA's Lee Byung-hun is the protagonist). Two incredible actors in their absolute prime. Also if you want a really good thriller then I recommend Forgotten, directed by Jang Hang-jun. I'm holding myself back right now because there are so many Korean movies to recommend.
For reference, as a Korean, I’ve mentioned this in comments on other reviews, and seeing it here again, it seems that this rumor has become almost like a widely accepted truth overseas. This is clearly a false rumor. It is not true. Let me reiterate that while it is true that actor Choi Min-sik is a Buddhist, the claim that he is a vegetarian is completely baseless.
Park Chan-wook’s filmography is pretty amazing. Style and substance, brutal and hilarious. And he doesn’t use Josh Brolin. I, too, was about to turn that version off.
The beginning reminded me the story of a real Japanis reality show, where a guy was put in a room naked for more then a year and could eat and wear only the items he won at the lotteries. The ending was supposed to be when he won items on 1 million yens. But the showrunners made new goal then. Millions were watching and he even did not give consent on streaming it online. Maybe showrunners were inspired by Oldboy Manga. In came out in 1996. The show started in 1998.

When you said "There's Josh Brolin", I felt physically ill. Well played.
