That looks absolutely terrific! I've never seen the leaves of young garlic anywhere I've lived though (Russia and Georgia), hopefully I can find them in Vietnam where I"m moving
We do have meadow garlic, they are really small and have a super strong flavor, they have a little sprout out the top and you just pull them right out the ground, at least here in Texas.
Shame you don't have it there... the only thing I can think is if you blend roasted Garlic with some Spinach, that may give you a paste that is similar
