I always say south of the border Tuesday, that way it isn’t just tacos! Shredded beef tacos in a crunchy shell is definitely my favorite with all the trimmings. Second would be crispy Carnitas and a flame charred corn tortilla with raw onions and plenty of cilantro. As always Mandy, they all looks good.

For the shredded beef tacos, you should dip the tortillas in the juice and fill the tortilla with the meat then grill it in a skillet. Kind of like a Birria taco.
Hi Mandy, I'm Hispanic and we always put our tortillas on a comal, I'm not sure what the English word for this would be, maybe a pizza iron or a griddle or something similar that is cast iron, anyway I really think you'd enjoy the texture much better. They just taste better! 😃 You could put one on, flip it and keep it between kitchen towels while you do the same to the next one etc. Thank you again for a wonderful, inspirational video!

One thing to remember when cooking a Chuck roast or really any kind of roast in a pressure cooker is after the cooking time has lapsed, don't release the pressure. Let it drop on its own. Meat will be much more tender. Sudden pressure drop tightens the meat fibers.
I have made the Korean BBQ tacos from a previous video and we all LOVED them. I need to find a way to store all the "keeper meals" because I forgot about this one!

Oh holy cow. I made the Mexican shredded beef for dinner and it was amazing! Seriously. We used the leftovers for quesadillas and it was even better. Hubby said this is a weekly meal now and it’s my favorite tacos I’ve made. ❤❤
An interesting twist, which can even be turned into appetizers, is converting to quesadillas (with plenty of butter during frying and fresh ingredients on the side). Changes the texture of tortillas, and if cut in quarters then increases ease of eating while at a cocktail party.

I haven't tried all of these ways for tacos but I have tried the Korean Tacos and I have to say those would be incredibly hard to beat! They are so so good!! I'm so glad I tried those back when you shared them in a top 5 video. They are easily in my top 5 favorite meals.

Asking y'all to please pray for my mom. We had strong winds Friday evening. She had 4 large pine trees fall on her land and one came inches from where she was sitting. Plus, her rental property had some extensive damage to it. It might have to be torn down. She is a widow and disabled so if it has to be torn down, she will lose the income from it. I love way you talk. I am a ARMY brat. So I never lived in the south but my mom is from Tennessee and she taught me how to talk. Every one finds it hilarious that I have a southern accent. Not as strong as yours. Anytime we lived in America it was north east. . I love that you and hubby have loved one another for so long. I have loved my hubby for 30 years I am still under 50 . I had my babies early. So now this stay at home mommy has only adult kids.
Mandy, there's only my husband and I at home. When I make a recipe. I'll make the whole recipe. We'll eat part of it. The rest I will freeze, and that becomes my freezer meal. You will be astounded how many freezer meals you will accumulate. Great for fast lunches, and dinners. 🥰
I'm never one to comment, but this was a trick I learned when I had my instantpot. The little slots that are on the handle of the pot itself are to rest your lid in, and it helps from making a condensation mess. Give it a try!

anytime I have excess broth like the 1st dish I thicken it with a cornstarch slurry as well as reducing it OR just throw rice in it.. I love doing chunks of beast in the crock pot, I usually give it a good coat of pepper then sear all sides in a smoking hot cast skillet before going in for a low and slow, I think it adds a bit more flavor especially if you are making a gravy. Stew meat can be cooked like filling 2 ( I dont have an instant pot) and a lot of stores sell a fine minced beef for carna picata, it makes EXCELLENT tacos... Ive never done korean bbq, that looked amazing!
Love these! I do similar with the shredded beef. I add a generous splash of white vinegar (about 1-2Tbsp) and a squeeze of lime at the start and then finish with more fresh lime. Makes it taste like carnitas from my favorite taco truck. FYI You are the first channel I check when I get home/done with work. If you've uploaded something I get so excited I grab a snack (your videos always make me hungry) and a beverage and settle in for all the feels, a few laughs and tons of inspiration! I am so excited to try the carnitas recipe. I have made the Korean bbq tacos before with the chuck roast and it was amazing. I made it again this past weekend and used some inexpensive weird cut of pork (because beef is apparently infused with gold these days). It was amazing! Spicy, yummy, juicy goodness! The cut of pork was tougher than a chuck roast so I pulled it out and chopped it up, added it back to the awesome sauce and pressure cooked it another 5 minutes! YUMMY
I’ve been making that first recipe for years. We call it Poor Man’s Chipotle. I will often double everything but the chicken and put the extra in the freezer for later.

These look amazing! I use the copycat Taco Bell quesadilla sauce recipe and the Applebee's copycat fiesta chicken sauce you shared in some of your older videos. Use large tortillas, layer the quesadilla sauce, all ur toppings and meat, crushed tortillas chips, drizzle with the fiesta sauce, roll and toast/sear shut. 😊 Those sauces are awesome!

I had the thought when watching these that the first 3 dishes would also be very good served on Indian Jeera Rice, which is rice flavored with cumin! You could add whatever heat you'd like to add! I love carnitas. I like to make street tacos with them. Just use corn tortillas and add cilantro and chopped onions with some lime juice and tomatillo salsa.

I’m going to make the Korean beef taco. I’m going to substitute golden monkfruit for the brown sugar and use low carb tortilla wraps. Just to make it a more low carb. Got my roast marinating. Will put in crockpot instead of insta pot. Can’t wait for supper!!! Thankmyounfornsharing!
My daughter was raised in Colorado and our city has a large Pueblo Cili Festival. So she misses good Mexican food. The area in her new state the area she lives in has a high percentage of Latinos but you can’t get the ingredients to make the food she grew up eating.. love you recipes. Every time you say oil I laugh. Your son is handsome plus your husband is funny.
I learned something when I moved to San Antonio. Mexicans warm flour tortillas on a grilled or a skillet. Flour tortillas are kinda like brown n serve rolls. They’re done but the have better texture and taste if you grill them.

We do pulled beef barbecue sandwiches a lot like you did the shredded beef tacos. Just change the seasonings to bbq and that is so good, too!

Mandy you should get some Mexican oregano to use in these dishes. It's a totally different flavor than Italian oregano but it's fantastic.
