I have a theory (I'm sorry) What 'the man behind the tree' has done (I'm not referring to him as Gaster just in case it's not Gaster) is that he's found a little exit to the place he was trapped in, but he can't leave the room and keeps on finding 'rooms in between' in hopes one of them will let him get out. He is handing Kris eggs, potentially wishing that if he gets enough items from him outside of the rooms in between, he would be marked as a character who exists in that world, and could get into the dark world and out of what we assume is the void.
Memoryhead(I assume it's Memoryhead since they are the only monster who ever use the phrase "pain itself") wrote a poem about Gaster(it can be found in the game files) and it pretty much confirms the mystery man is Gaster the poem goes "is that a cut on your face or part of your eye?. the gash weaves down as if you cry. pain itself is the reason why" wait if the DT extractor was never created in Deltarunes universe how does Memoryhead exist?
Can you imagine that the reason that they go nuts is just because Gasters lonely so he just shoved all this random knowledge he knows cause he doesn’t know when to stop.
