That's so interesting that the dinner recipe needed saffron. My parents are from Trinidad and when we make dhal we use saffron but it's like a golden color. Great video Elle. I like that you eat homemade meals from different cultures.

That paella looks delicious. I'm Spanish so I feel qualified to say that ;-). I would say, though that you probably wouldn't need to do so much work. I would use the saffron as is. I normally cook skinless, boneless chicken thighs which are easier to cook. I cook the veg for a few minutes, then add the meat, then the rice until it gets translucent and then the water (always 2:1 water to rice ratio). Cook uncovered and then when you have a little water left turn the heat off and cover the pan. It may not be as authentic as the chef does but when cooking after work for a family, I prefer to go for convenience. It will still taste delicious x
The saffron available in stores outside in Spain is different to the one in Spain, hence the need for roasting. I live in the UK and I learnt that the hard way, when my paella missed the flavour!

Yes, saffron is grown in Spain where paella comes from. It gives food a delicious taste. :-)
