Just bought a tub of pimento cheese yesterday. Sure wish I'd waited. Lost my my Mom last year and seeing the two of you in the kitchen brings back wonderful memories. Thanks Chef & Mama Redbuck.
I'm sorry for your loss sir, it's always the small things that we remember with loved ones that aren't with us anymore that's keeps us going! God bless you and yours and we should all be spreading love with each other, it doesn't cost a thing
Your mama is amazing. I could sit and listen to her tell stories all day long. I lost my mama 3 years ago and miss her so much. Cherish your time with her, it doesn't last for ever.
Hallelujah! You just made your pimento cheese the real southern way!! 4 ingredients and that is all!! This was exactly he way my mother made it!!! Best ever! These cooks today think you have to add garlic powder, onion powder or some other stuff for southern pimento cheese! They don’t remember that back when our grandmother or great grandmother was making it, they didn’t have all that stuff!! Thank you so much for making this video so people can see the real way!!! ❤
" Chef Buck, please tell your beautiful Mama that I appreciate her recipe for pimento cheese spread. Your recipe is nice, as well. Duke's Mayonnaise is a favorite in my home so I know that Mama Redbuck's recipe is definitely delicious. Thanks for sharing this recipe with your viewers. "
Your mama is so sweet. Please tell her thank you for sharing her recipe. My wife loves pimiento cheese and I'd love to surprise her with a nice homemade batch of it
Mama Redbuck is the BEST! And she’s right...down here in the south, way out in the country, sometimes the prisoners get loose. Grew up with that and they were almost always captured near where we lived. Haha! Pimento cheese is the best. I add a lot more stuff to mine. I add cream cheese, cheddar, Colby jack, mayo, a dash of chipotle hot sauce, a dash of Worcestershire sauce, and anything else that sounds good. There is no bad pimento cheese. It’s ALL good! Thanks Mama Redbuck!
yeah...I remember when I was a kid we used to have to drive down what seemed like miles of winding red clay road to get to my grandma's house in the woods...we used to keep a look out for deer and snakes, and at night I'd be too scared to go out on the back porch cause it was too dark and I always thought something was gonna come out of the woods and snatch me
This has to be the most comforting southern food I've known. My grandmother to make me pimento and cheese sandwiches after I got off the bus for a snack. It just takes me back to a simple place and time when the world was okay. Now I'm trying to make it on my own because the price of buying pre-made pimento and cheese has become outrageous.
yep...I've been eating pimento cheese my whole life, too...my Mama learned it from my dad's mom, but my mama didn't grow up on pimento cheese when she was a kid...before she met my dad she was a midwest farmer's daughter, so she was probably eating oatmeal
I'm not from the south (but my Mom's family was, which I think has influenced many of my family's recipes - so maybe second cousin to being from the south?). Grew up in Wisconsin - so cheese is life and cheese spread is an essential element of any supper club salad bar trip. For years, I've been fascinated by pimento cheese - and you know what? A meemaw's recipe MUST be authentic. So, Chef Buck, your meemaw's pimento cheese recipe is now MY family's pimento cheese recipe. Thank you!
Amen! Reminded me of my Great Grandmother alot. She was such a sweet, yet timid and humble lady; and she was always the calm in the storm of our family. Any bit of trouble and she knew to come and get us kids and take us to the farm for a few days. I really miss her and my great grandpa Charlie and Mary.
Now I know where you get your cooking skill from. You sure are tempting me with the fried spam. I grew up on fried baloney sandwiches. Sharp cheddar pimiento cheese is great!
I loved toasted baloney when I was a kid.....put baloney on a slice of white bread and broil until the baloney edges curled up with that little puddle of baloney juice in the center....yummmmmy back then....although it sounds less yummy now
We can't get pimentos here in our town in BC Canada... So... I grew some roasted em and made some. It's been 24 hrs and it's absolutely amazing 😍. God Bless Memaw
Omg! I was born in Arkansas and raised in Wisconsin and introduced my best friend to this delicacy when we were teenagers. She still begs me to make it for her lazy behind when it is the easier snack to make. Thank you for posting this! I hope it will introduce Northerners to this great treat! I love that fact that Ms. Redbuck kept it simple which is the tastiest!
What also sounds good is a pound of grated pepper jack with a can of drained rain Chili’s and a little mayonnaise may be a little paprika. This is opened up my eyes to all sorts of new options. Also when I was in Lexington North Carolina several years ago I had a burger topped with pimento cheese and it was so good!

My husband likes spicy foods but he doesn't like pickled jalapenos. I will make this for him with the pimentos and fresh jalapenos and maybe a dash of black pepper for seasoning. Thanks to you and your Meemaw for this recipe.
Love the vids with your Mom .. she's the coolest! Being a Yankee, i just had Pimiento Cheese (bought) for the first time just last month .. was incredible .. but this homemade version has gotta be 10x better .. can;t believe how few ingredients! Glad u posted this.
Anthony, do yourself a favor and MAKE HOMEMADE pimento cheese. Eating store bought is a true sin. Use Cracker Barrel sharp or extra sharp and only Hellmans or Dukes mayo. Lots pepper. Yes it is amazing. Chef Buck is awesome. Watching this video is like going back home. :)). Enjoy! His mama is the cutest!!!
Definitely, make your own. There's no comparison between homemade and store bought. I wouldn't eat it growing up because mama always bought it but she had a friend give her a recipe recently and I just happened to stop by so I got to taste it. I now make it, myself. I just recently made it with 4 oz of cream cheese added to this recipe and it's now my favorite version. I'm considering adding garlic and onion powder too.
