2 thing to look into is the Throttle positioning sensor or a partially clogged catalytic converter. Those Mini vans are know to have those problems. Also good to see you and have a Merry Christmas.
Go to the parts store and get a can of SeaFoam. Dump the whole thing in the gas tank. It will help clear out all the nasty stuff built up in the fuel system. Should help with the cold starts on the van after sitting. You can use that stuff as needed. I swear by it.
I will also be one to recommend seafoam. Have used it with success several times over the years on vehicles that were not running properly due to gummed up fuel systems.

Its going to be either a vacuum leak or am O2 sensor or fuel sensor, maybe an injector, might be stale fuel but it not mechanical! Its going to be fuel regulation related sensor and or vacuum leak I'd guess. Guaranteed a garage will fix it in 10 minutes. Spray the engine with WD-40 in electrical connections and clean plugs just to get rid of any damp if it's been sitting a while.. hope this helps your bro will know just check the hoses for splits or leaks/loose connections etc 👍🏴🇬🇧

Your fuel injectors need cleaned. Not a complete spray of fuel will do that. Pour in the near empty gas tank and a can of Sea Foam additive, then fill the gas tank. Run this till near empty. During this cleaning, you may see some smoke out the exhaust pipe, this is normal. There's another treatment you can do, remove the spark plugs and pour 2 tablespoons of Sea Foam into each cylinder and install spark plugs (do NOT attempt to start car). Let it sit for 24 hrs, then start car. It will run rough and smoke will come out the exhaust pipe until the Sea Foam in the cylinders burns off. This happened to me and it fixed my rough and gunning engine like yours is doing. Hope this helps. Stay safe and take care.

It's probably your throttle cable sticking, making the truck do 40. Try cleaning, lubbing the cable! If it happens while driving, try stabbing the gas a few times to get it unjammed.

Always good to hear & see of you Juliana as well as family and friends. Exactly what you should be doing in my opinion while in the south and during the holidays! For the Van and since you are in FL - suggest even taking it to WalMart and having an injector cleaning done as it can only help it - not hurt it. You might have gotten some not so good gas in it and if it was anything more than 10% ethanol well that probably does not help it. Perhaps put some injector cleaner/Sea Foam in it just before you put gas in it so it can mix in with the gas is not costly and might help. Take Care; Stay well and stay safe in your travels... 🙂

Hey from Adam in Newfoundland, if you’re going to keep getting power steering fluid, get some Lucas power steering stop leak.. trust me it works, or at least it did for me. Just fluid would leak in days. But stop leak, using the vehicle frequently, would last months, or at least it did for me with a seal leak. And a very Canadian merry Christmas to you and your family, hope ya ha a great one down south.

The van needs a new Idle Air Control Valve. That model is known for this small issue after about 150,000 miles.
