How come when I’m using my paddle shifters when I slow all the way down or close to all the way down manual mode will turn off then it will say hit a paddle shifter to basically start over.
Because you need to manually turn your stick shift into the M. Now you really in manual, and you have full control of your gears. But when you in 3 and you slow down enough the car will shift you all the way down to 1. If you use paddle shifters in automatic the car will shift for you when is convenient for the car.

there isn't really a set number, just downshift when you're slowing down. you know you downshifted too early if it the RPM shows 4000-5000+ after you just downshifted a gear (although it's not the end of the world, wont really do nothing to your car)
