    For those who are saying you are over cooking the chicken: You have to just sear the chicken breast first on high heat and undercook it, then you finish it off in the pan when you simmer it for 10 min

    • @BlueZirnitra
      @BlueZirnitra 2 года назад +150

      Yeah there is no way those fat breasts were cooked through after a moderate sear on each side. No different to how cooking a steak works, searing it doesn't cook the middle unless you really overdo it. No one wants a medium rare chicken breast.

    • @gamersrevenge6528
      @gamersrevenge6528 2 года назад +53

    • @BlueZirnitra
      @BlueZirnitra 2 года назад +90

      @@gamersrevenge6528 sadly quite common I think. A lot of people are afraid of high heat because they think it will burn but low temp cooking is how you end up with flavourless, rubbery food.

    • @Eduardo-ji1eh
      @Eduardo-ji1eh 2 года назад +54

      @@BlueZirnitra well she didn’t seat at very high heat either… that’s why she left it around 5 min each side. I could tell by the color after that amount of time as well as the olive oil and butter not burning(they have a pretty low smoke point).
      Even if it’s almost fully cooked it’s normal, that’s why she finishes it off in the sauce on a low simmer. That will guarantee it finishes cooking but still stays juicy.

    • @BlueZirnitra
      @BlueZirnitra 2 года назад +24

      @@Eduardo-ji1eh it wasn't a low heat, otherwise she wouldn't have got such a good result. You don't want to sear chicken breast on full burner so a good strong medium heat is what you want. What you don't want is to poach the chicken in its own juices and get no colour at all, which is a problem a lot of amateur cooks have because sizzling scares them.
      We all understand why she simmered the meat in the sauce.

    Made this for supper yesterday. We really enjoyed this recipe and will make again. We did use spinach instead of parsley and I didn't have nutmeg so we left out, but really didn't miss it because it was good without it. (although might try with to see what difference it makes.) We put the onions in first to cook and added garlic after they cooked a bit to keep it from getting bitter.
    We also doubled the recipe for the sauce as we love our "gravy".
    To keep it low carb/keto friendly, we served over cauliflower rice and a side of green beans.

    I absolutely love you channel. I have a husband that was born in the Netherlands then moved to America as a small baby. His mother is Dutch and cook that way. He is really enjoying what I'm making. My biggest problem was always coming up with what to make. Watching you helps so much. One question can you let people the temp. you are frying meat or other things at. Once again love the recipe thanks again.

Take your chicken cover it in flour, then cook it in olive oil and some butter if you want, and a twig of rosemary if you want. add a little bit more flour in the pan while cooking, salt and pepper if you want. Much easier and you're gonna feel the whole tasty chicken, not only the 300 kilos of garlic instead lmao

    I make this with mushrooms and pork tenderloins instead. One of my favorites. Also, using a dry white wine (instead of a lemon) after the shallots have cooked and letting the alcohol cook out for a few minutes before adding the cream introduces the acidity of the lemon but with way more flavor.
    Lastly, I find nutmeg to be way too overpowering so consider adding just a pinch or 1/8 teaspoon instead.
    Cheers!

    It does look tasty, but in Brazil, the basic of cooking any kind of meat is letting it rest for a few minutes in vinegar or lemon with minced garlic and onion and a bit of salt. You can add other powdered seasonings as well. But only then do we start cooking the meat, dumping everything in the pan. I think the dish would be even tastier that way.
