    Not only the label adds cost but organic farming is labor intensive! We have an organic farmer by us & we see how much goes into this method. He also has a mill & sell his flours, it’s called Janie’s Mill..he raises ancient grains as well.

    My 72 Yr old friend, whom I’ve recently taught how to pressure can has dry canned potatoes and also carrots. They turned out really well, especially the carrots as they retained their colour, texture and better flavour than canned with water.

    Yogurt in the dehydrator. Brilliant! I use my Instant Pot but the dehydrator (I have a Cosori, too) is a great option to remember.

    My favorite way to cook dried, canned golden potatoes is to cut them in french fries, lightly spray with avocado oil, and air fry. I also like to dry can, cut them into cubes and fry in an iron skillet. My second favorite way to preserve potatoes is to thinly slice, blanch, and dehydrate. They do not turn dark and make beautiful casseroles. I absolutely love to listen to your Monday this and that program; thank you!

    What a loaded video! You covered a lot in this one and truly appreciate every subject you discussed. And what a beautiful granddaughter!! I still haven't used my dehydrated potatoes, but hope to soon. I hope you do a video on dry canning as well. Not sure when I would do it, but hopefully I will find time in a couple months.

    The dry canning potatoes are my favorite. I even did some dry canned potatoes with carrots added in before pressure canning and they are also delicious, and taste like fresh when I add them to soups, stews…
    What a beautiful little helper you have! My great granddaughter loves to help me in the kitchen also. She just turned 2.

    I dry can potatoes and cooked rice as well. I just pack my jars with potatoes, add a pat of butter and about a tsp of salt. I can attest that they last at least 6 months (I just started this method 6 months ago). As always great video. Much love and blessings. ❤

    I’ve tried drying potatoes, canned and dry canned. I like dry shredded for hash browns and dry canned for everything else. I’m also using my dry canned from almost 2 years ago.

    I just made Sour Clabber Cheese, with old milk kept in the fridge! It came out like cream cheese, i havent added any flavour yet!

    Yes. Import is Charged for ALL in Canada, now. Only Canadian has none. I have been forced to Hunt for Canadian Makers. With trying for Local, it is OK. But i lost a lots of Other Places, unless they are on Amazon. But many Charge more Shipping TO get it TO Amazon! Lots of Tricks i am Crossing! Walmart Site has heaps of Other Sellers.

    We grew non-gmo potatoes in containers in 2022. Really fun and easy. We had to water occasionally spray with neem oil a couple of times but not much work at all. So easy to just turn container over and grab them!

    Reading my mind again! I harvested way more potatoes this spring than usual (200 lbs... I'm swamped) Their storage is not working out because I have them stacked in boxes and I cannot unstack and restack on a regular enough basis to evaluate for rot successfully. I do not like canned potatoes. So, I am attempting to dehydrate them. Pulled them all out today to get them processed.

    I've been using the sliced and shredded homemade dehydrated potatoes for years. I'm still using potatoes from 4 years ago and I've noticed absolutely no degradation AT ALL. I keep them vacuum sealed and in a dark room (russets only) and they show no discoloration whatsoever when rehydrated (unless I use boiled chicken stock instead of boiling water). Diced potatoes are something I won't do again though. Only the shredded and sliced rehydrate nicely. And the shredded hashbrowns are amazing.

      I too keep mine vacuum sealed and in dark storage, it is possible it is the type of potato. We do not care for russets so I mostly store yellows. There maybe some reds in there too.

    I saw where the Amish/Mennonite can their green beans with only about 2 tablespoons of water. They come out great and aren't soggy. I've not tried it though.

    Hi Heidi, I have a collection of preservation/canning books. Over the last 2 months I've come across 3 books that had directions for dry canning sweet potatoes/yams. The pressure canning directions say 65 for pints and 95 for quarts. I think directions floating out on the internet for white potatoes list less time. I haven't found directions for dry canning white potatoes, but I've tried it and they were delicious.

    I think i will try potatoes again next year, I took a break from trying this year because the blister bugs and roly polies pretty much decimated them, so dis-heartening.. but i have worked on controlling them better this year so maybe we can try again :) if not I might just buy some taters on sale to put up in the extended pantry we will see.. thanks for sharing !

    I have dehydrated both sliced and cubed potatoes. I tend to use the sliced ones more, but a couple months ago I had just put water in the jar of cubed potatoes, then stuck them in the refrigerator and forgot about them. Then I was making hamburgers and thought, hey, I'll drain the water off of those and blot them dry and fry them. They were sort of like French Fries. Not as good as cutting up and frying a fresh potato, but good enough of the spur of the moment. I like canning some potatoes, too, for that gap between April when all of my potatoes go to seed, and new ones come in. Even though I love rice and pasta, too!

      I have tried soaking and frying them and they were fine but as you say, not near as good as using fresh. The texture is just a bit off

      I believe it works similar to the Cosori so as long as you have the space and can set your heat at 110°, it should work :)

    I love the Azure Market coffee as well. As soon as they started selling it I jumped on it. But 2 months ago I gave up coffee. It makes sense that dehydrated potatoes work out well because that is what is in those boxed mixes you get at the store for like au gratin, scalloped potatoes and the like. It's Also what is in the "Helper" meals that have potato instead of pasta. But when you do it yourself you are able to leave out the chemicals and additives. Have you ever used the gallon sized jars from azure? They don't seal tight and I have been wondering if there's a way to vacuum seal them. 30 years ago I found a recipe for cheesecake using yogurt cheese in the la leche league cookbook "Whole Foods For the Whole Family". It's called "I ought to feel guilty cheesecake". So good!

      Yes, if I do dice them up again, I plan on cutting them smaller and have considering dehydrating them shredded, at least a small amount to try it

    To make very thick yogurt, we just make them in clay pot, the clay absorbs all the excess water giving a thick yogurt..

      That is cool but then you do not have the whey for its uses. It is a great addition to yeast breads and pancakes. Makes them fluffy.

      @@RainCountryHomestead You are right.. Coming from India, we didn't have the use for whey as we do not make breads.. My mom made yogurt in a small bowl every single day for the next day use, she still does that.. We do this kinda yogurt in clay pot when we make specific sweet dishes where thick curd is mixed with mango puree to make something called shrikhand or make specific curry dishes that requires for thick yogurt..

    I love you vidios but saddened by your referral of those who prefer tested recipes as canning Natzis. I personally would have like to know some science behind tested canning recipes for potatoes and dry canned. It makes me wonder if the same temps are reached with both processes? I also wonder if there is a way to actually test this? Thanks!❤

      It was not meant to be offensive, when I use that term it is about those that like to scream and lord over other what they think is best even when it goes against tried and true methods people have been using for many, many years

      Yes they can be over the top. It's a sad reality in the world these days that some are so loudly offensive to others in their determination to be right and controlling of the narrative. My father was full German and my grandfather came over from Germany near world War one. They were both quiet reserved people. Thank you for your explanation ​@RainCountryHomestead

      While you could, I will still recommend going no higher than 110° but I cannot say how long it would take to get a good infusion as I have never tried that. I would assume you would need at least 24 hours and you also will need to stick with heat stable oils such as coconut or avocado

      My chickens will often eat the greens without harm and dig up the potatoes and eat them out of the ground. In the 7 years I have had chickens, this has never hurt them though it did scare me at first when I saw them sticking their heads through the fencing that first year and eating the greens.
