  • This Guam Chamorro food shrimp and Spam patties recipe is moist and eggy....and still soft the next day! Okay, you may leave the Spam out of this CHamoru shrimp patty recipe if you'd like. Many islanders, including the Chamorros or Guamanians, love to include Spam in their Guam shrimp fritters.

    There's no need for negative comments. If you guys don't use spam, don't mention it. Just stick to shrimp. People are different. I use shrimp and chicken. I can use spam too or cornbeef. Be happy she even wanted to share her recipe with u. And if u need help with measurements, ask her. She gave one of the person who commented her contact. Ai susti maria jose these people. So negative.

    I don't know any of my family members who add Spam to their shrimp patties...=/ that's very gross sounding. I'd think the saltiness from the Spam over powers the shrimp flavor. All I know is shrimp, frozen mix veg. (defrosted, green beans cut to the same size as all the other veg., then all squeezed of the excess moisture), flour, salt, black pepper, and beer...that's my grandma's recipe, simple & still awesome.

    • @charlesceleste8551

      I've had it with spam and without. Loved either way. Saltiness wasn't a significant issue. If anything it actually brought out more flavor as salt tends to do in coooking. If you want to try spam, you can monitor how much is used through trial and error. And spam...it's an islander thing...if you weren't raised with it as a staple it probably isnt viewed as palatable. But for us islanders its straight up....Oooooh Mommy (umami...if that was incoherent). So, its strictly preference.

    I ate shrimp patties at Fiesta's on Guam in every village from Inarajan to Dededo/Yigo for more years than I can mention. However, I NEVER found a shrimp patty with Spam! Whatever... to each his own. But I have a problem with this recipe. For example, what oil is she using and at what temperature? A good cook KNOWS her temperature! She starts out at "Medium" she says then later goes to "Medium High" then turns it a little higher. Okay... what temperature? Thermometers are cheap! Buy a candy thermometer Paula!
    If the oil is too low, the shrimp patty will take too long to cook and will absorb a lot of oil (same for Fries). If the oil is too high, the outside will cook nice and brown but the inside will be uncooked or mushy! This is why when her first batch is put into the cooler oil the shrimp patties don't float and she has to scoop them up with a fork. Her 2nd batch hit the oil nicely and immediately started to float. Note also when one is putting in a cool patty.. the oil temperature drops. This is why it would be better to have an electric fryer which will keep the temperature at a precise heat.
    Off camera she notes that her batter is getting thin and she mentions adding more flour and baking soda. Okay... great! How much?
    Back to the oil. What kind of oil is she using? Vegetable oil? Corn oil (Mazola)? Soybean oil? Olive oil? Crisco shortening? Crisco Lard (from a pig) or Tallow from a cow?
    I don't like half-assed recipes. Good cooks can always be EXACT with every recipe so that each batch comes out perfectly.

      @@kolinken9524 you lived there 23 years total and never learned to make shrimp Patties? Never asked a friend to teach you?😂 don’t come on here criticizing the way she chooses to teach. She clearly can make shrimp Patties. Not her fault you can’t or haven’t tried learning while on island. You learn by making mistakes. Take it easy, respectfully.

    • @kolinken9524
      @kolinken9524 Год назад

      @@Charmander97 No where in my comment(s) did I state I don't know how to make shrimp patties. I DO! Let me be clear... I DO KNOW HOW TO MAKE DAMN GOOD SHRIMP PATTIES. Let me also be clear.. Shrimp patties were NOT INVENTED by Chamorro's (i.e. indigenous islanders) of Guam. I am NOT SHOWING DISRESPECT FOR THE CHAMORRO'S OF GUAM... JUST TELLING THE TRUTH. Any type of recipe like this is called a FRITTER and was brought to Guam by people from the USA. Most probably a military wife. Be that as it may.. SPAM was also brought to the islands at the end of World War II. And Guam has the highest rate of eating SPAM (per capita) than any other place in the world. SPAM is also full of a LOT of FAT and salt. So what happens to a FRITTER (i.e. shrimp/SPAM patty) when it hits oil? Think about it. Also let me be clear about another thing.. Cooking oil for Fries, Fritters of all kinds (which include Shrimp patties), potato chips, taro chips, etc., should be at 350f.
      So before you get on my ass about something you know nothing about.. I suggest you put glasses over your mouth so you can see what you are talking about!

      Jfc so angry over a simple RUclips tutorial. This isn’t Food Network so I don’t understand why you’re going on about “real cooks this, real cooks that” and also no one asked for a history lesson so you can get lost with that. And newsflash you ARE being very disrespectful by coming to a channel that posts traditional Chamorro recipes and shouting about how it’s not invented by Chamorro people and trying to tell us about our own culture. Do you go to cooking videos of other cultures to give history lessons bc if you want to get technical 90% of recipes have variants in other countries. We are well aware that most of our dishes have influences from other cultures we can’t fucking help it our culture was forcibly stripped away by not only Spain but Japan too. Go be ignorant and angry somewhere else you fucking know it all!
