    I used chana dal a few times and it made the dosas way too brown. So stopped using. Now I just use idli rice, methi seeds and urad dal.

      Channa dal is heavy for elderly. So I use urad, rice and methi seeds and half a cup of cooked rice(leftover) rather than pooha. And it always comes out crispy.

    After grinding for how many hours do we have to keep the batter to ferment? Can we keep it whole night so that it can be used for making in the morning

      @Saba suhel Mulla There is no shortcut for the fermentation process. The external weather has to facilitate the bacterial fermentation process within 8-12 hrs. I live in cold weather and I keep the ground batter in a preheated oven for a humid warm place.

    I try your recipes regularly and always get expected results. In this recipe, you used wet grinder. Could you please suggest to me which stone grinder is more durable. As I saw many reviews for different companies but none of them is good.

    Why you did twp batter seperately. Why can we soal rice along with urad dal and grind them together?

      I've seen Videos of people doing it and it worked. However the point in grinding it seperatly is that you want the dal to be completley smooth. Urad dal has this class of carbohydrates / polysaccharides called arabinogalactan which make the batter very sticky (or mucilaginous, in food science terms). This sticky substance keeps the foam stable and also helps in trapping the gas produced during fermentation (CO2) That is why the finer the urad dal the better it can trap gas. The rice should be slightly coarsly. It is easier to control thise 2 different texture when grinded seperatly.
