after a whole day of prepping, cooking and serving (x 2 (breakfast + lunch)) , how do you get everything clean again? is it just a big sink with lots of hot water and alot of manual scrubbing? or do you have massive dish-washer style device(s) which do all the pots, pans, trays etc and you just have to clean-down the surfaces?

Mt T, sometime, whenever you get vacation time, please try going to Peru for the gastronomic tour. You would come back with so many fusion ideas. After all, Peru has 491 national dishes as per the Guinness Book Of Records. If you have a chance, look up some recipes, you won't regret it. After all Peruvian food is 500 years of fusions. I bet you can come up with an ingenious fusion to make even the Peruvians jealous.
I watched Uncle Roger for the first time and haven’t laughed that much in awhile, he is very funny in the pad Thai video with Jaime Oliver. Diahrrea sauce 😂
