Funny you mention that blocks aren't a problem here, because the orange platforms are actually referred to as "Donut Blocks."
But they're also more commonly referred to as Donut Lifts so that's still not an issue.

These rules are very inconsistent. You can't touch a crate or the actual literal ground, but you can touch Dash BLOCKS and Touchscreen BLOCKS and Donut BLOCKS.
Those are dash panels, not dash blokcs.
And in this case they are donut platforms
They are called Dash and Donut blocks in Mario Maker.
It would still be possible anyways so that doesen't matter

5:43 Actually,. if you have a tanooki suit, you can build speed on the platform then jump and you can just glide all the way to the flagpole. And by the way you can get a tanooki suit in 3-1 by getting all the red coins

Those donut platforms you were touching are actually blocks, and those half-blocks in 5-7 are blocks too (I think), so you did touch a few blocks this challenge.
10:46 the official wiki calls the flashlights “Light Boxes” therefore by the same logic as warp boxes you could’ve used them.
You should do some Metroid challenges, definitely one of my favorite series

I figured a short cut in 7-4, you can skip fighting the bullies in the end, and just use a tanuki suit and peach together, to skip fighting the bullies.

By the way you could use koopa shells to break blocks since your not touching the blocks. So that’s a loop hole.
It is possible to beat 4-3 without touching blocks by using a tanooki suit (from 3-1) and just gliding to the end.
Next challenge idea: Can you beat Super Mario Bros 3 without Touching A Block!

Just wanted to let you know, those dash pad things are confirmed to be called Dash "Blocks".
On the beat block level you can actually skip all the beat blocks by using toad and a tanooki suit. I used to do this all the time for fun :)

Every time you hit the POW block the animation of the POW block becomes smaller, but the hitbox ALWAYS stays the same!
I'd say the Captain Toad levels are made of squares, maybe cubes - and the only blocks in them are devilish donut blocks.
