Egg rolls are one of the most popular Chinese American appetizers in the US, which were invented in New York City during the 1930s by a Chinese chef.

Serves: 12 egg rolls
Rest time: 2 hours and 20 minutes
Prep time: 45 minutes
Cook time: 15 minutes
For the sauce:
1 tablespoon cornstarch
1 tablespoon water
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
Pinch of white pepper
Pinch of five-spice powder
Pinch of sea salt
For the filling:
2 tablespoons vegetable oil, divided
1 pound ground chicken
Pinch of salt
1/2 carrot, julienned
2 cups thinly sliced cabbage
6 dried shiitake mushrooms, rehydrated in water for 2 hours, drained, and thinly sliced
3 cloves garlic, finely minced
3 tablespoons finely minced cilantro stems (save the leaves for another use)
1 (4-ounce) bundle dried glass noodles, soaked in water for 10 minutes, drained, and cut into 1-inch pieces
For the egg rolls:
24 egg roll wrappers
1 egg, beaten, for sealing wrappers
4 cups vegetable oil, for frying

I love all your videos. When i was in ohio I couldn’t for the life of me find good Chinese food to my Liking. Came across your video on making fried rice now i cant stop. Only difference is sometimes i use cauliflower rice instead because of the carbs the the recipe is the best ive had. Thank you!

Those look so good! I grew up in NYC my mother told me they called it an egg roll because it had a crunchy shell and soft inner like an egg

I made your these today and all I can is OMGGGGGG delicious 🤤however I did my own sauce, since I have sensitivity to some of the ingredients in the hoisin sauce, soy sauce, etc. I just did my own I use coconut amino instead of soy sauce, a little bit of tomato paste, some homemade fig jelly, rice vinegar, honey, mustard, water, mushroom seasoning mix from Trader Joe’s and cornstarch this sauce if came out incredibly delicious!

Hi. The cornstarch slurry is to absorb all the sauce (liquid) in the filling? Can you still put it in the collander to drain? Is that needed? Thank you!

I was always told the difference between the two rolls was the spring roll was strictly vegetable, and the egg roll had meat chicken, pork, shrimp etc. Boy do I feel stupid. 😂
John Lemons, Haha. In terms of the fillings, you can really add anything inside both of them.

Thank you! It came with the package. I believe it’s cornstarch, so each wrapper wouldn't stick to one another. Enjoy! ☺️

When I make my egg roll filling I just use shredded cabbage cooked with bacon, onions, and chili flakes. If I want to be a little more creative then I will also mix in a little tahini paste or low sugar peanut butter. Then the egg roll filling is done!
Hi do you make your eggroll castings or sheets homemade or do you buy them already made? If you make them homemade can you tell us the recipe and if you don’t can you tell us what brand you use?
Hi Chyna, I used a few brands before. You could try the ones from Wei Chuan or Nasoya. They are all pretty good. You can find them in most Asian supermarkets. :)

The texture wouldn't be as crispy and flaky. If you want to bake them, you can turn your oven to 375 degrees F. Bake for about 20 minutes. Good luck! ☺️

Can I freeze these and fry again later at 375 to make them crisper? I plan to bring them to a party and finish the second fry there
That's a great idea! Make sure to place them on a single layer, and space each other out a bit. This way, they don't stick to each other. Enjoy the party!

What is the difference between egg rolls and spring rolls? Thank you.
The wrappers are different. Spring roll wrappers don't contain eggs. Egg roll wrappers have eggs in them. They are typically larger, thicker, and have a surface that is more pebbly. :)
