Chicken breast(of the whole damn chicken) turned into adobo flakes was my go to college meal. I make in large batches, boil chicken with just enough water to cook and have some left over to be used for the sauce. hand pull/shred all the meat, separating the skin. crisp up the skin in a pan with a little oil then set aside. saute garlic and lots of ginger(you can add chili here if you want a little spice), put the shredded meat and brown a little bit. mix in the leftover water used in boiling, soy sauce, oyster sauce and pepper.. let the sauce dry down(like a dry adobo or if you want a little liquid then leave some). Cool and store, the longer it sits the better it taste because of the ginger. Each time you need some just put it over some hot rice, add egg and chives. You can ever turn it into sisig, reheat it with onions chili mayo or whatever your sisig recipe is.

The third recipe i learned that from my Sudanese colleague here in Riyadh. The only difference is she doesn't put ginger on it and the yoghurt she used to cook it together with the chicken.. It taste so good perfect for kubus or bread.
I agree .... chicken thigh is my preferred cut too.... juicier and tastier bec of its parts of dark meat... ideally, boneless and skinless if available.

Larb chicken should be cooked using water only. Garlic is not needed and dont cook the vegetables on the pan, vegetables should be cooked by the residual heat from the chicken and always always always add mint leaves.

I love Larb. I put a lot of mint and coriander in mine though. Sometimes, I add sotanghon too for some starch. So refreshing.

If it's thin, 4 minutes on the first side and 3 minutes on the second side. If it's thick, 5 minutes on each side.
