If you find that the Kimchi is staining your cutting boards, putting it in a (non plastic) bowl and cutting it with kitchen shears instead prevents it. Hope this helps :)
Putting some oil and sugar when stir-frying kimchi is more usual, but yours looks def yummy! Can you try to make namul (나물) kinds? Namul is a kind of banchan made of greens and vegies and the hidden backbone of Korean cuisines. I guess I'm spilling the beans. lol Anyway, You can cook Korean food !
