  • Adobong Atay with Green Beans or “Liver and String beans cooked Adobo-style” is an easy and savory dish made of chicken liver, ginger, garlic, onion, pepper, some sugar, oyster sauce, soy sauce, bay leaves, vinegar, and string beans. A quick dish that just needs a bit of preparation, a few minutes of simmering, and some freshly cooked rice to pair with after.

    INGREDIENTS:
    1/2 kilo atay (chicken liver)
    400grams Green beans
    1 thumb-sized ginger
    1 small onion
    4 cloves garlic
    1/4 cup soy sauce
    2 tablespoon oyster sauce
    pepper to taste
    1/4 cup vinegar
    1 teaspoon sugar (optional)
    2 to 3 dried bay leaf
    Steps:
    Heat some oil in a pan, saute ginger, before cooking garlic until aromatic. Then onions till these are slightly translucent.
    Add in the liver. Saute till these changes in color, and some of the juices come out. Add some pepper, sugar, oyster sauce, soy sauce, and bay leaves. Mix well.
    Pour in vinegar. Cover and simmer for 4 - 5 minutes at medium heat. Add in the green beans. Mix well. Cover again for a few minutes, or till the beans have cooked.
    Serve & enjoy!
