    Hi Kevin and Sarah, this is probably my most favorite video of all time! The cheese making was amazing kevin! The pizza looked so delicious! I have to admit I am so jealous of your dinner! All your meals look so yummy but this was extra special when you realize the fruits of your labor and the gift that your land and animals and your hard work offers you in return for being such good stewards of the homestead/farm that the Lord has given to you!       I actually tried to use this video with BAD results. Soon after I added the CITRIC ACID I had grainy ricotta. It is as if the rennet didn't seem to have time to work. So I am making lasagna instead of pizza today.

    Thank you Kevin for your recipe. I got a cheese kit but the Mozzarella cheese never turned out quite right, so I decided to try your recipe. I watched your video twice, and took notes. When I made cheese today, I would play a segment and then do it, adding my notes. Since I used cheap store bought milk, the curds did not look like yours but I kept on going. My curds looked like cottage cheese or ricotta cheese, so I strained them through a flour sack cloth over two colanders and a large bowl. It made it easier to squeeze out the whey, too. I used the hot water bath 5 times as it is cold here today and the cheese cooled off pretty fast. My cheese looks amazing and is cooling now. I can’t wait to try it tonight.
    Now that I have your great recipe, I will look for some better milk to use for the next time. Thank you for sharing your recipe and showing us how to make it! All the best! 😀👍💕🌸

    want to send a tip for yeast use. I've been baking with yeast for years and yeast in small quanities can be expensive. The tip is to buy a two pound brick and keep it in a good sealed container in the freezer. On my third brick. First two lasted nine years each, starting seventh year on third. keeping it sealed in the freezer it will keep almost indefinatly

      @@debshilling1353 If you have a wholesale food store in your area they should have it for 5 to 7 dollars. If not google red star yeast and you'll see lots of websites but for more $$ plus shipping. Then it's like Kevin says you'll have to do the nerdy math. good luck.

    Curios as to why you didn’t knead the dough and let it rise. I’m Italian. My family did not bake the crust first. Also, the the cheese was put on first. It forms a bond with the dough. Then add your toppings of choice. Sauce is the last step to be added. The edge of the dough is brushed with olive oil. Adding the cheese first keeps the dough from being soggy. The crust cooks more evenly especially the center. There are so many variations to making pizza. I thought I would share mine. Love your videos.

    Hi, I'm Italian, your mozzarella is fantastic, you use a rolling pin better than many Italian women ... there are many ways to make pizza and yours is an Italian pizza, with products from the garden that you and Sarah cultivated ... I make it higher and leavened even 24 hours, but many Italians prefer it low ... Congratulations to the chef!

    Use a cheesecloth Kevin to squeeze the liquid out of the curds. Just keep twisting it.

    Thank you for the video! You made the mozzarella process so common sense and easy to follow. I have an idea for you on the pizza crust, though.
    If you aren't going to wait to rise the dough anyway, why bother adding yeast? If you're doing a quick crust like that, try adding 1/2 tsp or so each of baking soda & baking powder to the flour instead, and keep everything else the same, rest time and roll-out and prebake and all. You'll get a tender pastry crust with softer edges that rises to fluffy goodness without waiting an hour on yeast to rise.

      My hubby was like that, had never ever washed a load of clothes etc. until I broke my femur and hip. Ended with me being pretty much disabled. Now he is an excellent cook and does most of everything. We have hired some household help, but daily things he dies daily chores.

    I enjoyed knowing how to make the cheese and thank you for sharing your pizza dough recipe. Kevin is so excited to produce his pizza with 99% of the ingredients coming from the homestead - I feel happy as well.     Adding freshly dried herbs, crushed garlic, and thinly sliced onions on the top is a nice finishing touch while baking. After the pizza cools for a few minutes, adding fresh basil is delicious. Thank you for helping us feed our families with instruction.

    I loved the sparkle in your eyes when the pizza was done, thinking of how the ingredients came from your own land and work. One suggestion: I think using a knife with a rounded tip (like some bread knives) might prevent scratching the pot when you cut the whey (but I admit I've never made cheese).

    Your mozzarella really looks great. I know you wanted it solid enough to shred but if you left it softer and then stored it in the whey it would be creamier. Delicious!

    Your children will have wonderful memories of growing up on your homestead, where they’ve had most of what they’ve eaten to be organic and homemade, right from the milk they drink to the cheese and butter they eat.     I just made my first batch!! I didn't have citric acid so I had to use vinegar and it came out awesome! Thank you. FYI for anyone wondering i used 1/4 c white vinegar to the gallon of raw milk.

    I worked at a market here in Richmond, VA that I made 30 pound of mozzarella at a time and made 6 batches a day. I loved it.

    Great video! You can make the dough the day before so you don't have as much work, it can sit in the fridge which will actually make it even better, and you could double the dough as there seems to be enough cheese for two pizzas, I like to over indulge in pizza and I have no regrets! 😀

    Amazing! I've watched a lot of cheese making videos, and this is by far the best I've seen. And cooking from pretty much 100% home grown product is a dream that one day I hope to fulfill. Thank you, thank you! P.S. Safety suggestion: put a damp towel or a couple layers of damp paper towel under your cutting board to keep it from slipping around.

      Cut a piece of the textured kitchen cupboard liner from the $ store and put it under cutting board, glass bowl etc to prevent it from moving.

    Wonderful traditional method video! Thank you for making it, I commented this before on the day you published this video but I deleted it because of comments others made to my comment. I had mentioned in the first comment that I was glad to see the traditional method instead of another microwave version but one troll in particular jumped on my words as if I am anti microwave which is not what I meant so I decided to delete that first comment and thereby deleted all of the comments that had been made to my comment. Again I love the video and thanks again for showing the traditional method which is being lost these days.

    I use rennet tablets and even use ultra pasteurized milk. The citric acid is essential for separation of curd and whey. I use the whey to fertilize my plants. It’s important to have a really good thick bottom stainless pot and stainless spoon. I use the microwave to reheat my cheese

    I have a suggestion for reusing the ziploc bags. I reuse as many as possible. I make sure to mark on them what was in them. Then I wash it out and store the meat ones in the freezer so there is no chance for them to go bad. Non meat goes in a container in the cupboard.

    You can use the whey for lactofermenting, soaking grains and flours etc.

    I use ordinary white vinegar for curdling. 7 tablespoons per 4 cups of whole milk. I love it. I use the leftover whey for sour-dough bread. best bread ever. If you want cream cheese instead, use 4 tablespoons. But you will have to use a blender to cream up the curds.

    I add ginger to the whey and then carbonate it via Drink Mate for ginger ale. Also, I simmer my frozen (Atlantic) haddock in the whey for a unique flavor. I am glad to hear your pigs are raised properly.

      It all starts basically the same way. But for different types, you might add extra stuff, wax or cure for weeks to months. Curd Nerd is a great channel for different types of cheeses! And he has a soothing voice, so even if you don't make cheese, he has a calming effect.

    Thanks so much Kevin. I bought a cheese making kit for my wife and we tried to follow the directions that came with the kit and it would have been a disaster. Watching you work with the cheese, use the hot water to allow you to stretch and shape it really saved the day. I haven't even watched the pizza part of the video yet!

    I didn't have citric acid on hand, but about 3/4c of white vinegar, 5% acidity, worked in a pinch! We have British Guernsey dairy goats, so I always get specifically goat rennet, seems to work best with our milk, which makes sense. It comes 30x concentrated.
