I think Ellen actually messes up on purpose when cooking with a Chef on her show (cause she's funny like that)...she did the same thing when she had Bobby Flay on her show. But watch her starting at 2:27...judging from what I see she's a decent flipper. I know for sure I couldn't flip anything and have it land back in the pan again, lol.
He's not hyper he's just trying really hard not to swear because he's on American TV. Here in England he can swear all he likes, and trust me he does! He's famous for his swearing, as much as he's famous for his cooking!

Either that or he is hiring someone to work at one of his restaurants. He has to try to get them as close to perfection as he can, which means pushing them beyond the limits. Difference here is he is not training in a chef or giving away anything.

He'll bring on a guest speaker that opposes his view but spends the entire time making their life difficult and not let the person speak. In this case, she's acting like an idiot.
