- The Atlantic sturgeon is one of the biggest fish in the world. It is an endangered species. The range of this so-called “living fossil”
includes the Estuary and Gulf of St. Lawrence. It’s called a “living fossil” because the species has barely changed since it came into existence over 200 million years ago. It has not had to evolve much because it is extremely well adapted to its habitat. Unlike most fish, its body is not covered with scales. It is instead covered with five lateral rows of scutes,
which are bony plates similar to armour. Atlantic sturgeon is also an “anadromous” species, which means it lives in saltwater but migrates to freshwater to spawn.
Come and admire this majestic pensioner, in the big Gulf of St. Lawrence basin, as soon as the Biodôme reopens on August 31, 2020!

I'm glad humans are catching on to the amazing taste of caviar but this isn't the same species as we have back in the Mesozoic era the population of stursion were more diverse back then and caviar is more of a comfort food for us carnivores
