    Those wings look amazing! Great job big D! I agree! Just because chicken is done at 165, doesn't always mean you have to take it out at that exact moment. You would be surprised how better it comes out if you just wait a tad bit longer! Keep these gems coming Dawg!

    Hey Dawgfatha. I have never heard of the B&B post oak pellets. Got the Pit Boss pellets first, but I did not like those at all...no real smoke flavor. I looked at some reviews and heard great things about Bear Mountain. I will try those..but what can you tell me about these pellets? Do they give you that reach smoke flavor in your meat? Open to any suggestions...lol

    Question. Running the temp up to 210 to get crispy skin sounds great but doesn't that dry out the meat?

      Wings are pretty forgiving and can take it. Try it out and see what the sweet spot is for you. But no these weren't dry at all.

    Do you need to spritz your wings, if you run them past 165??

      No spritz like a brisket but I do spray them with fat so they can have more help to get crispy. So butter or a spray oil works well. And typically speaking I run my wings up close to 200F to get them crispy.

      Once they are crispy to my liking I pull them off. Safe is at 175F. Wings are forgiving so yeah I've pulled them at 200F or so before.

      I never sauce my wings. Nothing to hide in my cooks so no sauce needed. If I ever use sauce on my cooks my friends that know me immediately ask what did i do wrong that I had to cover up with sauce. lol

    Have you heard about adding a little baking powder to your wing rub then letting them air dry in the fridge before grilling to get crispy skin I saw it on Americas Test Kitchen
